Everything Onion Dip

This onion dip is composed entirely of onions and is all an onion dip should be. Along with savory shallots, aromatic chives, and the essential dried onion, which gives it the flavor of your favorite childhood French onion dip, yellow, red, and green onions are also added. For any major game or party, you may serve this dip with anything and everything, but if you must choose, serve it with some robust, premium potato chips. As for leftovers, they make the finest baked potato topping if you’re fortunate enough to have any!

Ingredients

  1. 1 medium yellow onion
  2. 2 tablespoons olive oil
  3. 1 teaspoon kosher salt, or more to taste
  4. ½ cup minced shallots
  5. ½ cup diced red onions
  6. ½ teaspoon granulated garlic
  7. 1 tablespoon minced dried onion
  8. ¾ cup mayonnaise
  9. 2 cups sour cream
  10. ¼ teaspoon freshly ground black pepper
  11. ⅛ teaspoon cayenne pepper
  12. ⅓ cup thinly sliced green onions, or more to taste
  13. ¼ cup thinly sliced fresh chives, or more to taste

Instructions

  1. Cut both ends off the yellow onion and cut evenly into 2 halves. Remove and discard skin. Place onion halves on a cutting board with cut-sides down. Make vertical slices against the grain, then turn and slice across the cuts to chop. Chop again if you’d like smaller pieces. You should have about 2 cups chopped onion.
  2. Heat olive oil in a large skillet over high heat. Transfer onion and salt into the hot oil. Cook until onions are deep brown in color, 7 to 8 minutes. Add shallots and red onions; stir and saute until they start to soften and sweeten, 3 to 4 minutes. Turn off the heat and stir in garlic and dried onion. Set aside to cool completely, about 20 minutes.
  3. Combine mayonnaise, sour cream, pepper, cayenne, and cooled onion mixture; mix until thoroughly combined. Cover and chill in the refrigerator for 4 to 12 hours, or overnight.
  4. Remove dip from the refrigerator and stir in green onions and chives. Taste and adjust seasoning. Transfer dip into a serving bowl and garnish with more green onions and chives to serve.
  5. Try to get the thickest, firmest sour cream you can buy. You can make this with all sour cream (instead of mayonnaise) but I think it’s better with mayonnaise and sour cream.

I’ve made this three times already within the last two months! Truly a highly requested recipe in this household. I’ve made a few adjustments. I caramelized the onions on low for about 30 mins. because I had the time. I also subbed the sour cream with Greek yogurt. What a difference it makes by letting the flavors chill together overnight. This dip tastes great with bell peppers as a vessel or some kettle potato chips. Thanks for this yummy recipe.

I made this recipe for Superbowl Sunday. It was fantastic. It was certainly better than eating the over-processed onion dips that come out of a can or jar. It’s worth the extra effort if you want to skip the soup mix and sour cream (sorry Mom).

Great dip! Two things: 1) the green onions add a sharp taste to the dip, so omit if looking for a nostalgic onion dip flavor and 2) before salting, try it first with the chips you’re serving it with.
