Ingredients
- 2 tablespoons butter
- ½ (8 ounce) package cream cheese, softened
- ½ cup shredded Gouda cheese
- ¼ cup mayonnaise
- ¼ cup chicken broth
- 2 tablespoons dry ranch dressing mix (such as Hidden Valley Ranch®)
- 2 cups chopped cooked broccoli
- 1 ¾ cups diced cooked chicken
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 ½ cups shredded sharp Cheddar cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a large skillet over medium heat. Whisk in cream cheese, Gouda cheese, mayonnaise, chicken broth, and ranch dressing mix. Reduce heat to low; cook, stirring constantly, until completely incorporated, 4 to 5 minutes.
- Stir in broccoli, chicken, salt, and pepper until combined. Transfer to a casserole dish and top with Cheddar cheese.
- Bake in the preheated oven until cheese is melted and broccoli-chicken mixture is heated through, about 25 minutes. Switch the oven to broil; cook until cheese starts to brown, 2 to 4 minutes.

Love that this recipe doesn’t contain canned soup. We both enjoyed it but it was too salty for me. Next time, I will reduce the salt (leave out the ranch addition and use unsalted butter) and add onions for better flavor. Used frozen chopped broccoli that I microwaved. It got really thick so I added additional liquid – broccoli liquid next time. I prepared it in an oven proof skillet and baked that in the oven. Really liked the broiled cheese. This is an easy supper served with rice or noodles. It’s a keeper!

The ranch that is in the recipe is ENTIRELY TOO MUCH. I could not tolerate it at all. I kept adding more of the other liquid ingredients to tone it down and finally got it right. It all has a good flavor but too much ranch, too much bouillon, too much salt. Go easy on these and build your taste is what I would recommend. I ‘m pretty sure this would be a delicious casserole if the seasonings were adjusted.
I had to make some substitutions. I used Harvard instead of Gouda cheese. And, based on the reviews, I didn’t add any salt (or pepper) folks could add their own at the table. There were compliments on how delicious this was. On, the downside, the stated prep time was way wrong. It took me about 30 minutes to take the chicken off the rotisserie chicken and get it cut up and it took at least 20 minutes to wash, trim, and steam the broccoli. More realistic times should be added to published recipes. I will make it again when I have lots of time.

Good recipe for the most part. I agree with other reviewers that it was too salty and too rich, even for keto. If I make it again, I will try cutting the ranch mix to 1 tablespoon, cut the butter to one tablespoon, and substitute sour cream for the mayo.

This was very salty and the mayonnaise gave a weird aftertaste. I have made a lot of different versions of this and this was by far the least favorite.
This is really good! I only gave it 4 stars as written as I didn’t care for the ranch seasoning. Here are the changes I made: added sautéed onions, a tsp of garlic powder, a tablespoon of lemon juice, a bit of sour cream and a little extra chicken broth to the sauce (I used smoked gouda and it really does make all the difference!) and I crunched up fat snax (keto almond flour crackers) on top. Definitely a keeper! You can use frozen chopped Broccoli and a rotisserie chicken to make this a really quick and yummy keto dinner!!
I doubled the ingredients for this recipe and added fresh asparagus and onion. It was delicious and served to feed three teenage boys, spouse and myself.
This recipe is very flavorful. I used the three cheese bag from Costco because I did not have Gouda cheese. My husband loved it. We will be making this again!
My husband and I loved it! We did not use the ranch seasoning packet and feel it would be way too salty if we did. It was great without. I did squeeze in a tad of ranch dressing.

After tasting this I decided that it was sooo good that I did not need to top it with more cheese or bake it. I cut the recipe in half because there was only 2 of us and it was the perfect amount. I will make this often.

I did not have gouda cheese or ranch powder. I used the mixed shredded cheddar/Monterey, and added garlic with the salt * pepper. Really good! Really rich!

I made this recipe as directed, and while otherwise delicious, it tasted too salty. I used rotisserie chicken and the Hidden Valley Ranch mix as directed. Next time I will make sure I use unsalted butter in the pan, and I may even need to make ranch dressing from scratch to reduce the sodium. However, the chicken, cheese sauce, and broccoli was fantastic! UPDATE (6/8/20): I made this again but this time omitted the salt from the recipe and used unsalted butter. It was better, but it still seemed salty to us. Next time I will make ranch seasoning from scratch.
Followed current recipe and added Cayenne pepper to spice it up a bit. Turned out amazing and very filling.
