Ingredients
- 2 ½ cups Basmati rice
- 4 (10 ounce) cans coconut milk
- 1 pinch salt
Instructions
- In a large saucepan over high heat, combine rice, coconut milk and salt; bring to a boil.
- Reduce heat, cover and simmer for 20 to 25 minutes, or until liquid is absorbed and rice is tender.

We liked it!!
This turned out gluey and stuck to the bottom of the pan and still was absolutely beautiful! However, instead of Coconut milk, I mistakenly used Evaporated milk! Next time I shall use the correct ingredients!

Yes. I altered it with apx. A pinch or quarter tsp of curry and reduced rice amount to 1 1/2 cups of basmati rice and then referred to the liquids in the recipe. I liked it and will make it again.
I really liked this. I made this twice now. The first time I used regular coconut mike, the second time, I used 3/4 light coconut milk and 1/4 water. I used 1 part rice to 2 parts liquid. I cooked it for 25-30 minutes, and had to stir frequently, as this likes to boil over. I used a whole grain Basmati rice.

Made one cup of rice with one can of coconut milk (400ml) and it was perfect amount for two to three people. Awesome recipe. So glad I tried it. Definitely on my fav list.
it tased weird
This was such an easy recipe. I adjusted the recipe according to other reviews and added water to the milk. Also, I found you must stir it constantly or else it sticks to the pot. Delicious!

By itself, this has a simple, subtle flavor. Made this with curried chicken and it made the meal. Match made in heaven.
Never been a fan of rice. Tried the Indian Resturant in town and decided I loved Indian Food and the rice was good. So tried this tonight. Now a “Big Fan”! Followed recipe exactly, except cut in half as there are only two of us. Served it with Chicken Tikka Masala, also Indian. PERFECT!
for 2 servings, one 13 oz can of coconut milk is just perfect! you’ll have an extra oz but no worries! just a little xtra creaminess, right?
Pretty good. Slight bit bland the first time i made it. The second time I did doctor it up a little per previous recommendations with sugar, salt and flaked coconut and it was delicious!!!
Based on some of the reviews, I did 2 cups jasmine rice (it’s what I had), 2 cans of lite coconut milk and 1/2 cup water. Brought coconut milk and water to boil then added rice, brought boil back up then simmered until absorbed. I did cover it until the last 5-10 minutes or so. It turned out nice! Served it with a honey Dijon chicken curry. It was a good combo, thank you!
I like to add juice from half a lime & finely chopped cilantro to make it extra tasty
I LOVE LOVE LOVE this rice!! It smells amazing and tastes absolutely delicious;; and I followed the recipe exactly. I will be making this many more times!!!
This had a nice flavor and is easy. I made a smaller amount, using 1c rice, 1 can coconut milk, and 1/4c water, per another reviewer. You do need to be sure it’s on a VERY low heat on an electric stove, because the bottom started to stick and brown.
I loved it! I made it as a side dish with coconut curry shrimp. Definitely a keeper.
