Orange Salsa

Japanese rice balls can be made using this recipe. You could even use fried rice or almost any other kind of filling within the rice! Although you can use anything you have on hand, the most common filler in Japan is bonito flakes with soy sauce and pickled plums.

Ingredients

  1. 2 large oranges, peeled and cut into chunks
  2. 1 medium tomato, seeded and diced
  3. ½ cup minced red onion
  4. ¼ medium jalapeno pepper, minced
  5. 1 tablespoon apple juice
  6. 1 teaspoon grated orange zest
  7. 1 teaspoon minced garlic
  8. ½ teaspoon minced fresh ginger root
  9. 1 pinch salt
  10. 1 tablespoon chopped fresh cilantro

Instructions

  1. Combine oranges, tomato, onion, jalapeño, apple juice, orange zest, garlic, ginger, and salt in a bowl; toss to combine. Cover and refrigerate until chilled, about 30 minutes. Stir in cilantro before serving.

Very nice on grilled grouper, but would be equally good on a grilled boneless chicken breast. This also would be a nice topping on crostini, something a little different from the traditional tomato-basil combo. The citrus really gives this a burst of freshness and the jalapeño a little kick of heat. Would make this one again.
