This dish is based on one I created while taking a cooking lesson in Bangkok. You can modify the amount of vegetables and spice to suit your tastes, and you can swap chicken for firm tofu. over a bed of jasmine rice. For more heat, add more or less chili garlic paste.

Ingredients
- 2 tablespoons paprika
- 2 teaspoons oregano
- 1 ½ teaspoons cumin
- 1 ½ teaspoons garlic powder
- ¾ teaspoon onion powder
- ½ teaspoon cayenne pepper, or to taste (Optional)
Instructions
- Whisk paprika, oregano, cumin, garlic powder, onion powder, and cayenne pepper together in a bowl.
- Paprika is a pepper and should be refrigerated for maximum shelf life and potency.
Reviews
This might be a good seasoning for some things, but it’s not chili powder. My advice would be to add 2 Tbs Guajillo and 2 Tbs Ancho chili power to actually make it a chili powder blend.
Good ratio of spices, tastes great without the sodium of pre-made blends. I used the amount of Cayenne in the recipe, and it is just at the right level for me after I let it sit for a day.

I used smoked paprika and I think that’s key.
Very good recipe. I was out of chili powder and searched for homemade chili powder. This recipe came up, to my surprise, these spices are exactly what I use along with “chili powder” to make my chili rather than buying the chili seasoning packet. The chili seasoning packet has too much sodium, and I have to limit my sodium intake. Thank you for posting this recipe.
Never mind the snobby purists who give one star reviews because something doesn’t meet their criteria for authenticity. This stuff tastes great and that’s all that really matters. The only change I made was to use half smoked paprika and half regular. It tastes better than any chili powder I’ve ever had from a store.

I’m an American living in Australia and this is one seasoning I always need but hard to find– this was perfect. Made double recipe and used half of it– next time will do a 3 or 4x size.
I almost made this but realized, it had no chilies in it. Kinda weird. Sure cayenne comes from a pepper but a flavor profile should have depth and just throwing heat on in the end is lazy imho
Ran out of Chili powder right in the middle of making a huge pot of Chili. Best thing that ever happened to my chili. As this blend along with the addition of some smoked paprika and some Chipotle pepper I had on hand, resulted in the best tasting chili I ever made. Keeping all proportions and adding 1 Tbsp of both smoked Paprika and Chipotle powder, I tripled the recipe to have on hand. Will not buy store bought chili powder blend again.
No changes except that I put the full amount plus a smidge more of cayenne pepper. It made it just right for us. I’m amazed that you can make your own chili powder and it is so good!
I didn’t have onion powder, so I increased the garlic powder to 2 tsp
