Grandma’s Stuffed Celery

At Thanksgiving and Christmas, my grandmother usually prepared stuffed celery. Before the holiday feast, when we were youngsters, we would slyly sneak a slice of celery to sate our hunger. By the time it came time for dinner, it had almost all been consumed, and Grandma always made a big deal out of us. I never have a holiday meal without it now!

Ingredients

  1. 1 bunch celery – large stalks washed, trimmed, and cut into 3 sections
  2. 2 (8 ounce) packages cream cheese at room temperature
  3. ¾ cup chopped pimento-stuffed green olives
  4. 2 cloves garlic, finely minced
  5. 1 pinch salt and freshly cracked black pepper to taste

Instructions

  1. Thoroughly dry each piece of celery with paper towels. Mix the cream cheese, olives, garlic, salt, and black pepper in a bowl. Using a knife, spread a generous amount of cream cheese filling down the center indentation of each celery piece. Serve immediately or refrigerate.

We all really liked this mixture. I didn’t have quite enough stuffed olives, so I supplemented with capers. Let the mix sit in the fridge overnight before adding on top of celery and carrot slices. Great starting base for other dips too!

I had a feeling this was going to be grand simply from the chopped olives. I have issues with garlic, so I cut back on it (used garlic powder as it was what I had on hand). As green olives are briny, I did not add any salt. I made up for it with the pepper. Made as directed minus the above provisions. This is divine. I will make, again. Thank you for sharing the recipe!

Next time would like to make with light cream cheese because so rich. Be sure to chop the olives finely or hard to spread on the celery.

I have tried this recipe but I didn’t have the olives in my fridge or celery. So i just used carrots instead. Also I didn’t replace the olives. It was still amazing and my family loves it! I have to make this again! 🙂
