These Liège waffles can be eaten for breakfast or dessert and are sweeter than Belgian waffles from Brussels. With whipped cream, fruit, and warm, melted chocolate, serve waffles warm or at room temperature.

Ingredients
- 3 orange pekoe tea bags
- 3 cups water
- ¼ cup white sugar
- 10 cardamom seeds, or to taste
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 1 (12 fluid ounce) can evaporated milk
Instructions
- Cut tea bags open and empty into a small bowl; discard tea bags.
- Bring water to a boil in a saucepan; add loose tea. Boil tea until water becomes dark red, 3 to 5 minutes. Stir sugar into tea.
- Grind cardamom seeds in an electric grinder or using a mortar and pestle. Stir ground cardamom, cinnamon, nutmeg, and ginger into tea; boil until flavors are infused, about 10 minutes.
- Stir milk into tea and bring back to a boil for about 2 minutes. Pour tea through a sieve to separate out solids. Serve hot.
- You can control the ratio of the water/milk by adding one more cup of water or one less. This is supposed to be a very sweet drink, so feel free to add more sugar if you want the very authentic version. You can use fresh ginger root (sliced) and cinnamon sticks if you wish but I find the powders deliver stronger flavors. For the tea, I use Lipton(R) yellow label tea bags.

I love this tea so much I make it every morning and I want to thank the recipe writer. I was home recovering from COVID with an upset stomach that my H2 agonist(famatodine)and TUMS wasnt helping enough so I looked for a ginger based tea and this did the trick entirely-NO more pills . I just love the flavor and richness. I mince ginger root and added allspice because I like a clove taste . I enjoy mine sweet and richer with evaporated milk.
I made this without sugar and I used almond milk. It is fantastic! Add stevia if you choose
Delicious tea. Made it as is but didn’t bother cutting the tea bags open, i just boiled the tea in the bag. I already forwarded the recipe to a friend and will definitely make it again.
I used whole milk and added a little more sugar. Very tasty
Very good. It’s great to serve to guests, but I make it for myself as well. It’s a nice way to have a quiet moment in our busy lives. I made it as directed, except I use a variety of good black tea in place of the orange pekoe — all of them work well.
I just made this for the 1st time and think it great stuff. I did not have the suggested tea, thus I used a Bigelow – White tea with Tangerine and it turned out fantastic. I will make it again! It does take a few minutes to make, however it is well worth the effort. Thanks for the contribution to “AllRecipes”.
Dear Hollywood Andrews, I am looking for Al-kbous tea. I am in the Los Angeles area and with “Hollywood” in your name, I’m hoping you are in LA too. Even if you are not, could you tell me where you found the Al-kbous tea? thanks!
I have this almost everyday except I use Al-kbous tea (finely ground). This can be found in most arabian food stores. I allow spices to simmer a bit longer before adding tea and simmer for a couple to three more minutes.I usually go for that dark amber color. Add evaporated milk and add more sugar if needed. You may prefer to use a fine hand-held strainer before serving. Traditionally it is served as is and the leaves just settle to bottom. Enjoy! And yes I agree.. it IS addictive because it is sooo yummy. Remember, you can make this however you want until it is juuuuust right. 🙂
This is beyond could become, it is addictive. I’ve done it more often without the tea to eliminate the caffeine factor and I like it just as much.
OMG. This could become addictive.
