Sautéed Apple, Onion, and Fennel

This vegetable side dish is ideal to serve alongside any of your favorite dishes because it has hints of natural sweetness from apples and fennel.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 pound fennel, trimmed and thinly sliced
  3. 1 onion, halved and thinly sliced
  4. ½ teaspoon fennel seeds
  5. ¼ teaspoon salt
  6. ⅛ teaspoon black pepper
  7. 1 apple, cored and sliced with peel
  8. freshly ground black pepper and fennel fronds

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add fennel, onion, and fennel seeds. Season with salt and pepper.
  2. Cook, stirring occasionally, until fennel is just tender and beginning to brown, 8 to 10 minutes. Stir in apple and cook until tender, about 5 minutes. Top with additional black pepper and, if desired, fennel fronds.

This recipe is missing the type of apple that the chef used, which is a major omission IMO! I tried using a Fuji apple and it was just ok! Next time, I will try using a Granny Smith apple.
