While residing in Spain, a 75-year-old woman in Madrid taught me how to make this fantastic cream of zucchini soup. It’s great, simple, affordable, low in fat, and a great comfort dish. Change the recipe by including spinach, carrots, or other veggies. For a richer soup, add more potatoes. Croutons, paprika, and chives are used as garnish. Delish!

Ingredients
- ¾ cup pizza sauce
- 1 (12 ounce) package English muffins, split
- 1 ½ cups shredded mozzarella cheese
- ½ cup sliced pepperoni, or to taste
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Spread pizza sauce on cut slices of each muffin. Sprinkle mozzarella cheese over sauce. Top each with some pepperoni. Place on a cookie sheet.
- Bake in the preheated oven until cheese is melted and bubbly, 12 to 15 minutes.
- Feel free to use any pizza toppings you like.
