My mother’s recipe for traditional Indian curry with potatoes and cauliflower. Growing up, we frequently consumed this. Even my sister enjoys it with peas.

Ingredients
- 1 head cauliflower, cut into 1-inch florets
- 3 potatoes, peeled and cut into 1-inch chunks
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- 2 tomatoes, diced
- 1 onion, chopped
- 1 teaspoon salt
- 1 teaspoon curry powder
Instructions
- Place the cauliflower in a large, microwave-safe dish; cook in microwave on High for 3 minutes. Transfer the cauliflower to a bowl and set aside. Put the potatoes in the dish and cook in the microwave on High for 4 minutes. Pour into the bowl with the cauliflower.
- Heat the olive oil and cumin seeds in a large skillet over medium-high heat until the cumin swells and turns golden brown; stir the onions into the oil and cook about 3 minutes. Add the tomatoes and cook and stir another 3 minutes. Fold the cauliflower and potatoes into the mixture. Season with the curry powder and salt. Continue cooking until completely hot, 3 to 5 minutes. Serve hot.

I think you should have weights for the cauliflower, tomatoes, and potatoes. I think it was bland – I needed to add lots more to make it palatable
As posted this really lacked flavor and sauce. I microwaved the potatoes and cauliflower and thought it was a great time saver. I spiced it as written and even though I had two huge tomatoes it didn’t make a dent in the sauce department. I had to add a cup of chicken broth and I added 1 another tsp of cumin and curry powder, seasoned salt, turmeric and ground garlic.
Subbed sweet potato for potato, added asparagus to steam at the end. Delicious!
We ate half of it the first night and it was alright. The next day I altered it slightly. I added half a can of full fat coconut milk and simmered that with more tomatoes and added spices such as more cumin, coriander and garam masala. I served it over basmati rice and a piece of chili lime naan. It was like a whole new dish!
I would give this 5 stars for ease and flavor, but I had to make adjustments to the recipe. The seasoning was light, I felt like it needed closer to a tablespoonful of both cumin and curry powder. The pan was also dry, as I used fresh tomatoes, not like the photos at all. Canned, chopped tomatoes would have made the necessary saucy dish, but since I didn’t have any, I had to sub by adding tomato paste, water and more seasoning. I will make this again, but add a 10 oz can of chopped tomatoes.
Have made this many times. Usually steam the cauliflower and potatoes instead of microwaving. More spices !
It wasnt bad, but definitely bland even after doubling the seasoning.
Very good, family loved it. Wanted to create a sauce for it so added vegetable broth.
I have no idea what I did but I made it and no matter how much I tweaked it was very very bland. the vegetables were still crunchy and my potatoes still tasted raw this is definitely something I will not make again in future

Had to cover and let the potatoes and cauliflower steam another 10 minutes more before they were soft enough to serve.
Ric & I loved the flavor of this dish. The puréed sauce tasted great on our roasted pork tenderloin, too.

Great recipe. I microwaved the cauliflower and potatoes but will probably bake them next time. I used canned diced tomatoes and this worked real well. I’ll probably use a cup of peas next time as well.
This has become a household favorite. I put in extra curry powder and turmeric. Love it!
I want to rate this a 5 but I need help. It came out very dry, can anyone tell me why? I did follow the exact directions. What should I do differently next time?
I used the same ingredients, but a different method. In a Dutch oven on the stovetop I softened the onions in the oil, added the spices, then the tomatoes. Next I added the potatoes and baked in oven @ 350 F for 40 min. Then I added the cauliflower and baked it another 30 min. It takes more time but uses less dishes. Turned out great. Coconut oil makes a good swap for the olive oil too.
Used 1/4 tsp of cumin pwdr as had no seeds. Left out the peas. Husband liked it. Will be sure to have right ingredients next time. Otherwise not authentic?.
I’ll certainly make it again. The flavors were excellent. I thought there was too much potato and too little tomato, so I’ll change the ratio next time; and I followed the recipe for microwaving the potatoes, and they came out raw.
We both love Indian food. I prefer vegetarian dishes, so this was a perfect dish for me. My husband eats meat, so I added cooked chicken pieces to his share. I also added a cup of peas and served it with Basmati rice.
Why is this dish not labeled VEGAN? I see nothing in it that would not make it Vegan instead of Vegetarian. Delicious
