Grandma’s Buttermilk Pancakes

I adore the marinated cucumbers my grandma makes, and this is her recipe. Eating it in the warmer months or at any family gathering is a terrific idea.

Ingredients

  1. 3 cups all-purpose flour
  2. 1 tablespoon white sugar
  3. 1 teaspoon salt
  4. 1 teaspoon baking soda
  5. 3 cups buttermilk, or more as needed
  6. ½ cup vegetable oil
  7. 2 large eggs

Instructions

  1. Preheat a griddle to 400 degrees F (200 degrees C) according to manufacturer’s instructions.
  2. Combine flour, sugar, salt, and baking soda in a mixing bowl; mix thoroughly. Add 3 cups buttermilk, vegetable oil, and eggs; mix thoroughly by hand with a spoon. Add more buttermilk to adjust consistency if needed. Batter should be slightly lumpy but not too thick; pancakes will be flat if batter is overmixed.
  3. Working in batches, spoon batter onto the hot griddle. Cook until the bubbles that form on the top surface begin to pop, 3 to 4 minutes. Flip and cook until the other side is golden brown, about 2 minutes more.

I made the first batch exactly as written. They were OK, a little flat and a little, though. I then added another tbsp and a half of sugar, an equal amount of baking powder (1:1 with the baking soda), and 2 tsp of vanilla extract and liked them much better. It’s a great starter recipe imo.

First, I made these as written using a cup for cup gluten free flour. I added more than 3 cups of buttermilk as the batter was thick (and would not spread), I used nearly the full quart. The pancakes looked beautiful while cooking but the end result was a pancake that flattened as it cooled. My entire family commented there was too much oil in them. I would suggest halving the oil to 1/4 cup.

I made only half the recipe and got 9 pancakes. Other than that, I followed the recipe exactly as written. They were tasty and I would make them again. Thanks for sharing your recipe.
