Seaside Pasta with Vegetables

This roasted apple and parsnip soup is a wonderful way to improve your seasoning abilities in addition to being a tasty and comforting winter dinner. It’s the ideal dish for evaluating how salt affects food thanks to its mild, earthy, somewhat sweet, and delicately aromatic flavor. Crumbled blue cheese, chives, and croutons should be used as garnish.

Ingredients

  1. 8 ounces bow tie pasta
  2. 1 tablespoon olive oil
  3. 2 (6 ounce) fillets fresh salmon
  4. ½ teaspoon kosher salt
  5. 4 cloves garlic, finely chopped
  6. 1 pint grape tomatoes
  7. 2 cups broccoli florets, cut into bite-size pieces
  8. ½ cup chicken broth
  9. 1 lemon, zested and juiced
  10. ½ cup crumbled reduced-fat feta cheese
  11. 2 tablespoons coarsely chopped fresh dill
  12. ¼ teaspoon red pepper flakes

Instructions

  1. Prepare pasta following package instructions.
  2. Preheat large saute pan on medium-high 2-3 minutes. Place oil in pan. Season salmon with salt; cook 1-2 minutes on each side or until browned.
  3. Add garlic, tomatoes, broccoli, and broth; cook and stir 3-4 minutes or until salmon separates easily with a fork. Cut salmon into small bite-size pieces.
  4. Add pasta, lemon juice and zest, feta, dill, and red pepper flakes; toss to combine. Serve.

I used basil instead of dill, and left out the feta but put parmesan on top. Excellent recipe.

I’m still amazed more people haven’t commented on this recipe. I’ve made it several times and my wife and I really enjoy it. It’s quick and easy to prepare, I usually use salmon left over from the previous night and add it while the vegetables are cooking

I used cod instead of salmon as my little one is not a salmon fan. I eyeballed the feta and dill and probably used more of both than the recipe called for. My family enjoyed this and I will make it again.
