Grilled Cheese Sticks

My family adores the recipe that I learned from a friend. I can no longer cook a ham without adding some ham since someone constantly requests it to go with their sauce.

Ingredients

  1. 1 tablespoon mayonnaise, divided
  2. 2 slices day-old sourdough bread
  3. 2 tablespoons shredded Parmesan cheese
  4. 2 tablespoons finely grated extra-sharp Cheddar cheese, at room temperature
  5. 1 tablespoon finely grated Jack cheese, at room temperature
  6. 2 teaspoons minced green onion
  7. 1 clove garlic, minced (Optional)
  8. 2 dashes cayenne pepper (Optional)

Instructions

  1. Spread 1/2 teaspoon mayonnaise onto 1 side of each slice of bread. Sprinkle 1 tablespoon Parmesan cheese over mayonnaise layer, pressing cheese firmly into the bread.
  2. Combine remaining mayonnaise, Cheddar cheese, Jack cheese, green onion, garlic, and cayenne pepper in a bowl.
  3. Flip 1 bread slice over so the Parmesan layer is facing down, and spread Cheddar cheese mixture onto the bread. Top the Cheddar cheese mixture layer with the other slice of bread, so the Parmesan is on the outside of the sandwich. Cut sandwich into 4 equal slices.
  4. Heat a nonstick pan over medium heat; turn heat down to medium-low. Place sandwich sticks in the skillet and cook until golden brown and cheese is softly melted, 2 to 3 minutes per side.

These were excellent! I did use whole wheat bread because that is what I had on hand. This browns up nicely and is a good grown up version of a grilled cheese. I do think the serving size is off. As directed this makes the equivalent of one whole sandwich which only serves 1 person in my opinion. Great recipe! Thanks for sharing!
