Stella’s Avocado, Egg, and Onion

To sate my yearning for fresh salsa, I created this recipe. I used tomatillos as a substitute because I can’t eat raw tomatoes. It works. I can now have some tasty salsa once more.

Ingredients

  1. 2 hard-cooked eggs, mashed
  2. 1 avocado, mashed
  3. ¼ onion, finely chopped
  4. salt to taste

Instructions

  1. Stir the egg, avocado, onion, and salt together in bowl until well-mixed.

I have been making a similar version of this for 60 years. The only thing I add to this is lemon juice and seasoned salt & freshly ground pepper. My whole family loves it.
