Ingredients

  1. 1 (16 ounce) package spaghetti
  2. 6 slices bacon
  3. 3 eggs
  4. ½ cup milk
  5. 1 teaspoon salt
  6. 1 teaspoon freshly ground black pepper
  7. 2 tablespoons avocado oil (such as Acado™)
  8. 1 cup frozen petite peas, thawed
  9. 2 cloves garlic, chopped
  10. 1 cup grated Parmesan cheese
  11. 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  2. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble into small pieces.
  3. Whisk eggs, milk, salt, and pepper together in a bowl.
  4. Heat avocado oil in a large skillet over medium heat. Add spaghetti, milk mixture, peas, and garlic; cook and stir until milk mixture is heated through and coats the spaghetti, 5 to 10 minutes. Stir in bacon and Parmesan cheese. Garnish with parsley.

Too dry; not enough bacon. Simply not that great.

My family enjoyed this easy one pot meal. The only change I made was to add one cup of cottage cheese when I added the milk and egg mixture. I also reserved some of the pasta water, and added it back in when the pasta started to look dry. Oh, and I reduced the salt and pepper to 1/2 tsp each. It turned out good.

Very nice recipe that worked out perfectly. Quick and easy, the sauce and cheese blended well to create a very nice coating that was an excellent consistency. Make sure the pan you add the egg mixture to is on medium low so the egg mixture does not turn into scrambled eggs and that you continue to stir throughout the process. Thanks for the delicious recipe!
