Ham & Egg Salad

Excellent for holiday cookies! cookies prepared with persimmon pulp that are moist and spicy. They are elevated by the addition of raisins and nuts.

Ingredients

  1. 6 hard-boiled eggs
  2. ¼ cup mayonnaise, or more to taste
  3. 1 tablespoon mustard
  4. 1 dash hot sauce
  5. 1 pinch Salt and pepper to taste
  6. 1 (8 ounce) package Smithfield® Cubed Ham
  7. 1 shallot, chopped
  8. 2 ribs celery, chopped

Instructions

  1. Halve the hard-boiled eggs and remove the yolks to a bowl. Coarsely chop the egg whites and set aside.
  2. To the bowl with the egg yolks, add the mayonnaise, mustard, hot sauce, salt, and pepper. Using a fork, smash the mixture until smooth. Add the reserved chopped egg whites, ham, shallot, and celery. Toss to combine. If you like a creamier texture, add more mayonnaise.
