Ingredients

  1. 2 cups soy milk
  2. ½ cup white sugar
  3. ⅓ cup unsweetened cocoa powder
  4. ¼ cup cornstarch
  5. ½ teaspoon salt
  6. 1 teaspoon vanilla extract

Instructions

  1. Place soy milk in a pan over medium-low heat. Add sugar, cocoa powder, cornstarch, and salt. Whisk until no clumps remain. Cook, whisking every minute, until mixture boils, 10 to 15 minutes.
  2. Stir in vanilla and serve.
  3. Any non-dairy milk will work.

I made 1/2 the recipe and got 2 servings. I did not have to cook it for 10 minutes since my pudding thickend in 6 minutes. Instead of sugar I used Swerve. A quick and easy recipe for a tasty pudding. Thank you for the recipe.
