You’re not the only one who remembers eating ground beef and cheese-stuffed peppers as a kid. You’ve also come to the perfect place if you’re looking to enjoy keto (or low-carb) stuffed peppers. A dinner full of flavor and beauty is not necessary if you cut out carbohydrates. Stuffed peppers may become Paleo, keto, and low-carb delicacies with a couple of small adjustments. Add avocado slices, sour cream, and/or a sprinkle of olive oil as garnishes.

Ingredients

  1. 1 (8 ounce) package rotini pasta
  2. 1 cup fat-free mayonnaise
  3. 1 teaspoon lemon pepper seasoning
  4. ½ teaspoon dried mustard
  5. 24 cherry tomatoes, halved
  6. 1 (15 ounce) can peas, drained
  7. 2 (5 ounce) cans chicken packed in water, drained
  8. 1 pinch paprika

Instructions

  1. Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and rinse with cold water.
  2. Mix mayonnaise, lemon pepper seasoning, and dried mustard together in a large bowl. Mix in cherry tomatoes, peas, and chicken. Fold in rotini. Sprinkle paprika over salad before serving.
  3. Tuna can be substituted for chicken.

So easy to make. This would be perfect for potlucks, picnics or any other gathering. I didn’t have cherry tomatoes on hand so I chopped up some romas. A sprinkling of crushed red pepper flakes work well with this too.
