Ingredients

  1. ¼ cup Greek yogurt
  2. 1 tablespoon brown sugar
  3. 8 hard-boiled eggs, peeled and chopped
  4. ¼ cup chopped celery
  5. ¼ cup chopped green onion
  6. 2 tablespoons sweet pickle relish
  7. 2 tablespoons yellow mustard
  8. ¼ teaspoon dill weed
  9. ¼ teaspoon paprika
  10. ground black pepper to taste

Instructions

  1. Whisk yogurt and brown sugar together in a bowl. Add eggs, celery, green onion, relish, mustard, dill, paprika, and black pepper; mix well.
  2. Dijon mustard can be substituted for yellow mustard if desired.

We enjoyed it. I didn’t have any celery but next time I’ll be sure to include and I agree with previous review, less brown sugar.

While this is delicious, it is pretty sweet. The brown sugar takes the tang away from the Greek yogurt though. The thing I like about this recipe is that it is easy to adapt to your own preferences: use less brown sugar or sub dill pickle relish to take some of the sweet away, or use Dijon for a slightly different flavor. But it made a really good lunch the way it is written!
