Quinoa and ground turkey enchilada stew. Before serving, stir in the lime juice.

Ingredients

  1. 1 pound ground turkey
  2. 1 (19 ounce) can enchilada sauce
  3. 1 (15 ounce) can black beans, drained
  4. 1 ½ cups uncooked quinoa
  5. 1 (10 ounce) can diced tomatoes and green chiles, undrained
  6. 1 cup water
  7. 1 cup frozen corn
  8. ½ cup salsa
  9. ½ cup chopped onion
  10. ½ cup chopped green bell pepper
  11. 1 tablespoon chili powder
  12. 1 teaspoon minced garlic
  13. 1 teaspoon ground cumin
  14. 2 cups shredded Mexican cheese blend
  15. ⅓ cup chopped fresh cilantro

Instructions

  1. Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  2. Combine browned turkey, enchilada sauce, black beans, quinoa, diced tomatoes and chiles, water, corn, salsa, onion, green bell pepper, chili powder, garlic, and cumin in a slow cooker.
  3. Cook in the slow cooker on High until quinoa is tender and flavors are blended, about 4 hours. Stir in Cheddar cheese and cilantro.
  4. Use any color bell peppers you prefer.

Awesome, did not take a lot of time to make, had a spicy taste if you follow the directions, I did cut down some of the spice seasoning by leaving out the cilantro but added an extra 1/8 tsp of cumin and chili powder.

I didn’t have enchilada sauce, so I just used the same amount of medium salsa. I did not add the water, so it was more of a thicker chili like dish. I cooked on the stove like some of the others, no crockpot. Quick and easy.

It was Ok. I didn’t see the need for a slow-cooker, so I just cooked it stovetop. Probably could have used 1/2 as much quinoa.

The only change I made was to cook it on the stovetop. I browned the meat, onions, garlic, and pepper together and cooked the quinoa separately. Then I added everything together and it was great
