Fried Rice with Lychees (Koa Pad Lin Gee)

Thanks to premade cinnamon roll dough, a truly decadent monkey bread is surprisingly simple to make. This pull-apart bread looks lovely on your breakfast or brunch table and is loaded with layers of fresh apples and toasted walnuts. As it bakes, it fills your home with the aroma of cinnamon and nutmeg.

Ingredients

  1. 1 cup uncooked jasmine rice
  2. ½ cup water
  3. 3 tablespoons vegetable oil
  4. 2 cloves garlic, minced
  5. 2 tablespoons chopped carrot
  6. 1 tablespoon chopped onion
  7. 3 tablespoons soy-based liquid seasoning (such as Maggi®)
  8. ¼ cup reduced-sodium soy sauce
  9. 2 tablespoons chopped green onion
  10. 1 tablespoon chopped cashews
  11. 1 teaspoon raisins
  12. ¼ teaspoon white sugar
  13. ¼ teaspoon white pepper
  14. 5 canned lychees, drained and quartered

Instructions

  1. Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Once cooked, spread the rice into a shallow dish, and refrigerate until cold, or use 1 1/2 cups leftover cooked rice.
  2. Heat the oil in a wok or large skillet over medium-high heat. Stir in the garlic and cook a few seconds until fragrant, then stir in the carrots and onion, and continue cooking until the onion begins to soften. Add the cold rice, and cook and stir until hot. Pour in the soy sauce, soy seasoning, green onions, cashews, raisins, salt, and white pepper. Cook and stir until hot, then stir in the quartered lychees to serve.

Word of caution for others thinking of making this recipe – there are some things wrong with this recipe. I am giving it 3 stars as written. Here is what’s wrong, in my opinion: 1 cup uncooked rice takes 1-1/2 cups of water to cook (not 1/2 cup as stated in the recipe). It will also yield 3 cups cooked (Jasmine) rice (not the 1-1/2 cups leftover rice that the recipe states can be used). The carrot and onion amounts are too small compared to how much rice you will have, as well as the cashews and raisins (I actually measured out 1 tsp of raisins, and it actually equals 6 raisins … that would be 1-1/2 raisins per serving!) The Maggi® sauce and soy sauce amounts are too much. If I had used those amounts, my rice would have been swimming in it. The directions call for salt, but the ingredients list does not show it (and it’s not needed). Here’s what I did, which ended up being 5 stars: 2 cups leftover Jasmine rice, 1 carrot (chopped), 1/4 of a medium onion (chopped), 1 Tbls Maggi® Jugo sauce, 1 Tbls of low sodium soy sauce, 2 Tbls green onions, 1 tsp sugar, 1/4 teaspoon white pepper, 1/3 cup cashew pieces, 1 oz (small box) of raisins and 6 lychees. I also cooked the carrots and onion first, then added the garlic and proceeded on with the recipe directions. It turned out delicious!
