Monkey Bread Muffins

Monkey bread made from simple chilled biscuit dough and baked in muffin tins. My kid, who refers to these as “monkey sins,” enjoys being in charge of mixing the spiced sugar into the biscuit pieces. I adore that I can prepare a small number of these at once and enjoy them warm without having to wait for a sizable gathering to warrant filling a tube pan.

Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Servings: 6
Yield: 6 muffins

Ingredients

  1. 1 teaspoon apple pie spice
  2. ¼ cup white sugar
  3. 1 (12 ounce) can refrigerated biscuit dough, separated and cut into six pieces
  4. ½ cup brown sugar
  5. 3 tablespoons butter
  6. 1 teaspoon water

Instructions

  1. Preheat an oven to 375 degrees F (190 degrees C). Butter 6 muffin cups or line with paper muffin liners.
  2. Combine the apple pie spice and white sugar in a small bowl; roll the biscuit pieces in the mixture to coat. Divide the coated pieces between the prepared muffin cups.
  3. Combine the brown sugar, butter, and water in a small saucepan over medium heat; bring to a boil, stirring continuously. Allow the mixture to boil until the sugar is completely dissolved, 2 to 3 minutes. Spoon the mixture over the biscuit pieces.
  4. Bake in the preheated oven until golden, and the tops spring back when lightly pressed, 8 to 12 minutes.

This recipe is my new go to. It’s so quick and easy! I have toddlers so I cut the rolls into 8’s, which made 12 smaller muffins or 8 large.

Awesome, super sweet goodness. Very easy to make, I used large bisquits & put 3 pieces in each cup. Went over very well at our monthly breakfast!

I made these. They were super yummy but, even though they were fluffy when I took them out of the oven, they flattened as they cooled. What did I do wrong?

Easy and Yummy! I used a big can (15oz) of flaky buttermilk biscuits and it made 12 muffins with 4 pieces of biscuit in each cup. (I cut the biscuits into 6 pieces. I didn’t have apple pie spice so I subbed a tsp of cinnamon, 1/4 tsp nutmeg and a pinch of clove. The extra sugar and spice mixture was added to the cups before I added the brown sugar butter. This was so easy.

Love this! I did cut the brown sugar in half, and the apple pie spice/sugar blend was enough for two batches. My husband requested this one to be repeated!

Turned out pretty good…the second time. I pretty much followed the recipe as is. I’m not really a baker so maybe it was me but the original recipe left off details. Like divide all the glaze you make divided evenly among the muffins another recipe said add about 2 Tbsp per muffins. I used Pillsbury Grands muffins

Can you use pumpkin pie instead of apple pie spice?
Charles Miller
I used Pillsbury crescent dough, and pumpkin pie spice. Family went crazy for these!

Quick & easy substitute for cinnamon rolls. I did not have apple pie spice so used cinnamon. I had 1 can of jumbo biscuits so cut those into 6 pieces rather than four. Baked about 20 minutes. The kids gobbled them up. Hubby thought they could have been sweeter & it would be simple enough to drizzle with a powdered sugar glaze next time. I’ll certainly make this again.

The Monkey Bread Muffins were really good. If I were to try and make them again I would be more prepared. It had too much dough but that’s because we messed up the recipe. Overall they were pretty good and soft.

It was amazing with many Fall flavors within a baked dish, it was rather splendid.

The glaze on top is delicious. It tops off all, the rest of the sweet muffin the sugar-spice was very good, five stars. I recommend this recipe all the way, and it was super simple to make.

Great, delicious, and easy!! I doubled the recipe to make 12 muffin cups. You definitely need to use a muffin pan with raised edges so the topping doesn’t overflow. I would suggest pushing the biscuit bits into the cups because they raise a lot.

Easy and yummy, they did not last long at all! Only change I made was to add the extra cinnamon sugar I had left over after coating the biscuit pieces to the butter and brown sugar. Boiled lightly for a minute or two and spooned over cups. Will make again soon!

Great muffin!

Great little sweet treat. I followed the directions but put close to 5 pieces of the dough in each cup not 6. I think it’s only a judgement call based on the biscuits you use. Some are larger than others. I also used cinnamon sugar and but it in a sandwich bag and coated 6 cut slices at a time. We all liked these treats for breakfast this morning and I will be making them again.

Absolutely amazing. Delicious and easy. I can’t say much more than this. These are so amazing.

Easy to make for I had all the items in the Fridge or pantry. I didn’t want to waste the sugar coating mixture so I added it to the brown sugar mixture and added 1 Tablespoon of butter for keeping similar proportions. You need to work quick to spoon the mixture into the muffins before it starts to cool and set. It worked out great for hungry teens in the morning with a great taste!
