These delightful, chewy ‘brownies’ would be chocolate-based, but they are made with oatmeal instead. Create a genuinely tasty snack by including your favorites (nuts, chocolate chips, chocolate candies, and toffee chips).

Ingredients

  1. 1 cup butter at room temperature
  2. 1 cup firmly packed light brown sugar
  3. ½ cup white sugar
  4. 2 eggs
  5. 2 teaspoons vanilla extract
  6. ½ teaspoon salt
  7. 1 teaspoon baking soda
  8. 1 teaspoon baking powder
  9. 1 ½ cups all-purpose flour
  10. 2 cups rolled oats
  11. ½ cup chocolate chips
  12. ½ cup raisins
  13. ½ cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, beat the butter, brown sugar, and white sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, baking soda, baking powder, flour, rolled oats, plus chocolate chips, raisins, and chopped nuts if desired. Mix well to moisten all ingredients, and spread into the prepared baking pan.
  3. Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the pan for about 5 minutes before cutting into bars.

They are excellent!!! Here is how I adjusted the recipe to make it even healthier and it worked great: 1) cut brown and white sugar in half, 2) doubled chocolate chips (used only semi-sweet) and raisins, 3) added cinnamon and coconut, and 4) eliminated salt. Thanks!

I used 1/2 c butter and 1/2 c coconut oil. Also used 1 cup chocolate chips and 1/2 cup dried cranberries. Was amazing!

These were so good! The batter is very thick and a little bit difficulty to spread. However, the brownies turned out soft with chewy edges. I added chocolate chips to the top, not stirred into the batter. Next time, I may add nuts. I think these would also be good with just some cinnamon in the batter.

These are delicious bars. I did add some butterscotch chips I had. The only feedback I have is that I baked these for 25 min as they were brown on the top. They were too soft and difficult to remove from the pan. Next time I plan to bake them an additional 10 minutes.

There are not many recipes I would describe as “perfect,” but this is one of them. They were like the best oatmeal cookies I had ever had, but more moist (which I love.) I used raisins (half normal, half golden), chopped walnuts, and chocolate chips (half semi sweet, half milk chocolate.) I followed the recipe exactly other than my pan being 9.5 by 13.5 since for some reason I do not have a 9 by 13. I will definitely be making them again! My parents thought they were too sweet, but I disagree. 🙂

What a great recipe just as written! I halved it for a 8×8 pan. While it may not remind some people of classic chocolate brownies, it does have that gooey chewy texture of blonde brownies. I prefer this to even the best blonde brownie recipe as it has a nicer texture with the nuts, raisins and chips, with the added nutrition and fibre of rolled oats. These really satisfy my sweet tooth

I omitted the raisins and just added a mixture of chocolate chips, Heath chips, and walnuts. Take out after 20 minutes. They look like they could use more time in the oven but once they are cooled, you will appreciate how soft they are.
