It’s quite simple to make this side dish of roasted cherry tomatoes. Most tomatoes I don’t even like, but I adore these adorable cherry tomatoes. The basic recipe is as follows, but you can also add slivered garlic, chopped fresh basil, and Parmesan cheese at the very end. fantastic with pasta!

Ingredients
- 1 (46 fluid ounce) bottle low-sodium vegetable juice (such as V8®)
- 3 (15 ounce) cans tomato puree
- 3 cups low-sodium chicken broth
- 1 pint heavy whipping cream
- 3 tablespoons extra-virgin olive oil
- ½ cup unsalted butter, softened
- ¼ cup onion powder
- 2 tablespoons ground black pepper
- 2 tablespoons grated Parmesan cheese
- 6 bay leaves
- 1 teaspoon white sugar
Instructions
- Pour vegetable juice, tomato puree, chicken broth, heavy cream, and olive oil in a slow cooker. Stir butter, onion powder, pepper, Parmesan cheese, bay leaves, and sugar into the juice mixture.
- Cook on High for 1 hour. Remove bay leaves to serve.

Way too much!
Good, has some spice to it from the V8. But it does taste better after it sits in the refrigerator overnight
I thought the spices overwhelmed the soup. It did taste better after being in the refrigerator.
This “soup” basically tasted like seasoned V8 juice. It needs more to it, like brown rice or lots of cheese and sour cream. It’s pretty blah… And because it makes SO MUCH, cooking it on low for 5+ hours worked best.
This is a very tasty soup..after it sat in the fridge overnight. It tasted a lot like just the juice when I tasted it right after cooking, so do let this sit overnight for best flavor if you can. One hour on high did not even warm this soup up for me so I set the crockpot for 3 hours on low and that did the trick One last thing.. this makes a LOT more than 6 servings..be ready
