Easy Apple Cinnamon Roll Muffins

Depending on what I have in my fridge, I frequently make this salad in different variations with different amounts of bell pepper, tomato, or feta cheese. Bell peppers with a variety of colors look the best. Using the dressing on other salads is also possible, and it is really simple to make.

Ingredients

  1. 12 frozen dinner rolls (such as Rhodes®)
  2. cooking spray
  3. ½ cup white sugar
  4. ½ cup brown sugar
  5. 3 tablespoons ground cinnamon
  6. ¼ cup butter, melted
  7. 2 apple – peeled, cored, and chopped
  8. ¼ cup golden raisins
  9. ½ cup cream cheese, at room temperature
  10. ½ cup confectioners’ sugar
  11. 3 tablespoons heavy whipping cream, or more as needed
  12. 1 teaspoon vanilla extract

Instructions

  1. Put frozen rolls on a baking sheet, spray a piece of plastic wrap with cooking spray and place over rolls. Let rise until doubled in size, about 3 hours.
  2. Preheat oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  3. Mix white sugar, brown sugar, and cinnamon together in a bowl. Place melted butter in a small bowl.
  4. Grab approximately 1 tablespoon of thawed and risen dough and roll into a ball. Dip the ball in the melted butter and roll in the cinnamon-sugar mixture. Repeat to fill each muffin liner with 3 buttered and sugared dough balls.
  5. Combine apples and raisins in a bowl. Sprinkle about 1 teaspoon apple-raisin mixture over each muffin.
  6. Bake in the preheated oven until golden brown, about 25 minutes.
  7. Beat cream cheese, confectioners’ sugar, whipping cream, and vanilla extract together in a bowl until glaze is smooth, 3 to 5 minutes. Drizzle glaze over muffins.
  8. When you are making the dough balls, stick any extra onto some of the muffins to make them larger.
  9. If the glaze is too thick, add a bit more cream.

This recipe was rich, comforting and decadent. Based off of another review, I decided to cut my apples and rolls smaller and made two layers then topped with apples. I tossed my apples with some of the cinnamon / sugar mixture. I also did a little drizzle of heavy whipping cream over each muffin before baking to make for a soft gooey center. Highly recommend!

The kids and my husband loved these. However, a lot of the apples fell off the top onto the pan. I suggest putting them in after two of the dough balls, then topping with the third dough ball. Also, I had about twice as much cinnamon sugar mixture as I needed.
