Ingredients

  1. 1 cup all-purpose flour
  2. 2 ½ tablespoons white sugar
  3. 2 teaspoons baking powder
  4. 2 teaspoons ground cinnamon
  5. 1 teaspoon salt
  6. 1 cup milk
  7. 2 eggs
  8. 2 teaspoons vanilla extract
  9. 3 tablespoons butter, divided
  10. 3 tablespoons honey, or to taste

Instructions

  1. Mix flour, sugar, baking powder, cinnamon, and salt together in a large bowl.
  2. Mix milk, eggs, and vanilla extract together in a separate bowl. Pour into flour mixture slowly, while stirring, until batter is combined.
  3. Heat 1 tablespoon butter in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and edges are dry, 3 to 4 minutes. Drizzle some honey lightly on pancakes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter, adding 1 tablespoon of butter to the pan before each new batch.

Pretty good. Definitely better than plain pancakes, but there’s room for improvement and experimentation.

This is a deceptively simple recipe that brings a lot of flavor. I drizzled the honey on after buttering the cakes so I ended up using less pancake syrup. Combined with the vanilla and cinnamon it hit just the right notes.
