Air Fryer Cornflake Chicken Fingers

The best treat, especially in the summer, is true Italian gelato, which is simple to make at home. Because they have such a strong flavor, pistachios are my favorite nut. Use Sicilian Bronte pistachios if you can, but pistachio paste also works well if you can get some. I’ve provided a couple instructions for producing gelato without an ice cream maker, so don’t worry if you don’t have one. Add pistachio and chocolate shavings on top.

Ingredients

  1. 1 pound chicken tenders
  2. 1 teaspoon poultry seasoning
  3. 1 teaspoon salt
  4. ½ teaspoon ground black pepper
  5. 1 large egg, beaten
  6. 1 cup corn flakes, crushed
  7. 1 serving avocado oil cooking spray

Instructions

  1. Preheat the air fryer to 375 degrees F (190 degrees C).
  2. Season chicken tenders with poultry seasoning, salt, and black pepper. Dip in egg and then coat with crushed cornflakes. Place in the air fryer basket and spray with avocado oil.
  3. Air fry for 7 to 8 minutes. Flip chicken tenders, spray with avocado oil again, and air fry for an additional 3 to 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Made this twice already and the wife and I loved it both times! Made it exactly as written the first time and the wife even commented how delicious they were. The second time instead of egg I used pancake batter (left over from breakfast)! IMHO I believe the pancake batter made these fingers even better! But as I said, we loved these chicken fingers both ways!
