They seldom last past the first night they are made and are a big hit with my family. They are large, dense cookies with a lovely filling.

Ingredients

  1. 1 cup all-purpose flour
  2. 1 tablespoon white sugar
  3. 1 teaspoon baking powder
  4. ½ teaspoon baking soda
  5. ¼ teaspoon salt
  6. 1 cup milk
  7. 1 egg
  8. 2 tablespoons vegetable oil

Instructions

  1. Preheat a lightly oiled griddle over medium-high heat.
  2. Combine flour, sugar, baking powder, baking soda and salt. Make a well in the center. In a separate bowl, beat together egg, milk and oil. Pour milk mixture into flour mixture. Beat until smooth.
  3. Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I found this recipe 15 years ago…it’s hands down the absolute best pancake recipe I’ve ever tried. We’ve had years of success with it & have only made 1 adjustment – replaced the vegetable oil w rapeseed oil. My wife has a soybean allergy, so we switched it up & never looked back. Rapeseed oil is so much lighter than vegetable oil, it is tasteless so there’s absolutely no change to flavor, but the end result is a lighter/fluffier/better pancake. Give it a try.

Doubled recipe for my hungry family. Mixed my dry ingredients as indicated. Substituted butter as I didn’t have oil. Added milk to my desired consistency, about 1.5 cups. Cooked them on my electric griddle. BAM! Best pancakes I’ve ever made. Fluffy, moist, and had that perfect brown color.

I made exactly as-is, didn’t add anything. Was tempted to add flour, because the batter seemed really runny. But then the pancakes set up nicely in the pan. Next time I make them, I will take another reviewer’s suggestion and let the batter rest a bit in the refrigerator before making; hopefully this will make them fluffier. But a good basic pancake recipe – especially if you only have basic ingredients around the house.

Great recipe. I used whole wheat flour because I like a grainy pancake. Noticed some reviewers completely changed recipe by adding vanilla, cinnamon, whole wheat flour, etc. I will never understand how people think they are making the recipe. Using a recipe as a guide to make to personal taste is fine. However, give recipe maker fair shake by making as is or as close as possible & then rate it. Just my thoughts
