The next time you need taco shells, cook corn tortillas in the air fryer. I created this recipe in my Cuisinart air fryer oven because I don’t like the prepared, stiff taco shells that are available at the grocery store. These crisp, golden-brown, oil-free taco shells are prepared to be filled with all of your favorite fillings.

Ingredients

  1. 1 (9 inch) sponge cake
  2. ⅜ cup strong brewed coffee, room temperature
  3. ⅜ cup brandy
  4. 1 ½ pounds mascarpone cheese, room temperature
  5. 1 ½ cups confectioners’ sugar
  6. 3 tablespoons unsweetened cocoa powder, for dusting

Instructions

  1. Cut the cake in half lengthwise to make two layers. Combine the coffee and brandy. Sprinkle enough of the coffee mixture over the bottom cake layer to moisten it well, but not soak it.
  2. Beat together the mascarpone and the confectioners’ sugar until fluffy. Spread half the cheese mixture over the bottom cake layer. Top with remaining cake layer and spread remaining cheese on top. Dust liberally with sifted cocoa. Refrigerate 2 hours before serving.

This cake was a hit! This is a nice variation of Tarimusu and very easy to make. I altered the recipe a tiny bit by adding a splash rum to the mascarpone mixture. (One of my guests had 3 servings!)
