Strawberry Romaine Salad I

This is one of my favorite meals that was presented to my bridal shower. It is attractive and reviving. The dressing can be saved and used right before serving if the salad is being transported.

Ingredients

  1. 1 head romaine lettuce – rinsed, dried, and chopped
  2. 2 bunches fresh spinach – chopped, washed and dried
  3. 1 pint fresh strawberries, sliced
  4. 1 Bermuda onion, sliced
  5. ½ cup mayonnaise
  6. 2 tablespoons white wine vinegar
  7. ⅓ cup white sugar
  8. ¼ cup milk
  9. 2 tablespoons poppy seeds

Instructions

  1. In a large salad bowl, combine the romaine, spinach, strawberries and sliced onion.
  2. In a jar with a tight fitting lid, combine the mayonnaise, vinegar, sugar, milk and poppy seeds. Shake well and pour the dressing over salad. Toss until evenly coated.

Love this! It is very tasty and the dressing can go on any salad honestly. I put the dressing ingredients in a blender and added couple strawberries mainly for color since it was going on this salad with strawberries. It’s fabulous! Wouldn’t change a thing.

This was really good! I did use a little sugar than called for (1/4c instead of 1/3c) since I tend to find things too sweet at times, and it turned out perfect. The dressing also calls for a lot of poppy seeds, so you might want to go easy on those. I used a small Bermuda onion (the recipe didn’t state size) because a large one would have been too much for me. I added a sprinkle of salt to the dressing, as I found it was a little bland without. I would make this again with the noted changes. A perfect summer salad!

This is my favorite salad and dressing now. I make this at least once a month (if not more). I use red onion and have made using sugar and have used truvia sweetner to replace the sugar. I like the mixture of romaine and spinach but have used with other mixtures as well. I will continue making this. The strawberries, onion and dressing are such a complement to each other. It is amazing.

This was excellent! I scaled it down half-way and made it as a one dish salad for myself for dinner. The dressing was great; I cut back on the sugar, and it was still very good. I also added and assortment of olives, because I love ’em in salads. To a small portion of it, I added some crumbled blue cheese, and that worked really well in this salad. A keeper – thanks!

The salad was great! I halved fresh grapes and added them too. I also carmelized the onion prior to putting in in the salad. Really yummy and easy to put together! Goes great with BBQ chicken too.

Love this salad!! Very easy, but makes an impressive “company” dish. I’ve made it several times, and will continue to do so!! Hulling and slicing the strawberries is the the most time consuming step.

I made the recipe as written and I loved it! Don’t skip the onion – it offsets the sweetness of the dressing and berries for a perfect balance. This is super quick and easy. It will be one of my favorite summer recipes for the future
