Ingredients

  1. cooking spray
  2. 2 pounds ground turkey
  3. 1 (8 ounce) package Cheddar cheese, cubed (Optional)
  4. 1 onion, diced
  5. 1 cup seasoned bread crumbs
  6. ¾ cup milk
  7. 2 eggs
  8. 2 tablespoons Worcestershire sauce
  9. 2 cloves garlic, diced
  10. 1 teaspoon salt
  11. 1 teaspoon ground black pepper

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  2. Combine ground turkey, Cheddar cheese, onion, bread crumbs, milk, eggs, Worcestershire sauce, garlic, salt, and pepper in a large bowl; mix well with your hands.
  3. Drop scoops of the turkey mixture into the muffin tin using a large ice cream scoop.
  4. Bake in the preheated oven until golden brown, about 45 minutes.

Best version we’ve tried! I used a 1.7# pouch of ground turkey, plain panko breadcrumbs, and 1 TB of Italian seasoning. I also used diced frozen onions and minced garlic. Due to family food allergies, I substituted unsweetened almond milk and low-salt soy sauce for the milk and Worcestershire sauce (contains fish). With these ingredient swaps and no cheese, each muffin is 171 calories.

I liked the picture that shows gravy on them. The little meatloaf’s were good but, I left out the cheddar cheese and used a little of fat free. My husband has had way to many heart surgery’s to splurge on the fat in cheese. I did add a little Italian seasoning. But, I was really looking to see where the gravy came from.

I made them I modified them by putting grated cheese instead of the cheddar cheese and one egg and half of cup of bread crumbs to cut some of the calories out. I put a spicy glaze on top and everyone loves them!!!

Turned out perfect! Followed everything except the last 3 min I put some bbq sauce that I doctored up with Worcester sauce and let it caramelize a little. Yum. This is a keeper and I love having 12 turkey meatloaf cupcakes!

tasted great but baking in the muffin pan destroyed my oven since all the grease ran over and spattered everywhere. what a mess. if i make this again I’ll just bake it like a regular loaf.

I made half of the recipe. No changes. It was delicious! Moist and the bottom was a little crunchy. It was done in my oven in 35 minutes. This recipe could be used for any meal in different presentations.

I had ground turkey in my freezer, thinking I could make a healthy meatloaf for my husband and myself. This recipe was easy to follow, the ingredient portions were spot on and the finished product was OUTSTANDING! We ate four muffins for our dinner and I froze the rest in two meal portions. To be honest, I can’t wait to eat them again. Next time I’ll make sure I have turkey gravy. I used pork gravy as I had that in the house.

I halved the recipe, becaus I only had a lb of ground turkey. I didn’t have any bread crumbs, but I did use my blender to crush some saltine crackers with a little paprika, pepper, and garlic powder. I cut back on the salt to compensate the salt from the crackers. Also used green onions instead of regular onions. Turned out delicious, and I managed to make 12 muffins. It was a hit with my partner. She told me I need to make these again, ASAP.

I absolutely LOVE this recipe! Tonight I had no cheese, so I doubled, subbed a can of cream of mushroom for the cheese and used 1/2 cup of Ripple Milk Substitute. It was amazing! I’ve made it several times, both with and without cheese-great both ways!
