This spinach and nectarine salad is topped with gorgeous golden-brown pan-fried halloumi cheese, which is tossed with red onion and bell pepper for a crisp bite.

Ingredients

  1. 2 eggs
  2. 1 cup white sugar
  3. ½ cup vegetable oil
  4. ¾ cup milk
  5. ½ teaspoon almond extract
  6. 2 cups all-purpose flour
  7. 1 ½ teaspoons baking powder
  8. ½ teaspoon baking soda
  9. ¼ teaspoon salt
  10. ½ cup dates, pitted and chopped
  11. ½ cup candied cherries
  12. ½ cup raisins
  13. ½ cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  2. Beat eggs slightly. Beat in sugar and oil. Slowly add milk and almond flavoring.
  3. In second bowl put flour, baking powder, soda, and salt. Stir in dates, cherries, raisins, and nuts. Pour into batter, stirring only to moisten. Spoon into greased 9x5x3 inch loaf pan.
  4. Bake for 1 hour in 350 degree F (175 degree C) oven until a toothpick inserted in the center comes out clean. After 10 minutes turn loaf out to cool on a rack. Store in plastic bag.

I was looking for a pretty tea bread for the Christmas holidays. I made this as written with one exception-I left the raisins out, seemed like overkill to me. This is a colorful, moist loaf, perfect for gift-giving. My only question is: why call it Cherry SPICE Loaf? Not a lick of spice in this recipe!
