No-Bake Chocolate Eclair Cake

Ingredients

  1. 2 (3 ounce) packages instant vanilla pudding mix
  2. 3 cups milk
  3. 1 (8 ounce) container frozen whipped topping, thawed
  4. 1 (16 ounce) package chocolate graham crackers
  5. ¼ cup milk
  6. ⅓ cup unsweetened cocoa powder
  7. 1 cup white sugar
  8. 2 tablespoons butter
  9. 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine pudding mix and 3 cups milk; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
  2. In a buttered 9×13 inch baking dish, spread a layer of graham crackers on the bottom of the dish.
  3. Spread 1/2 of the pudding mixture over crackers, then top with graham crackers. Spread remaining pudding over crackers; top second pudding layer with another layer of crackers.
  4. To make topping: In a medium saucepan over medium-high heat, combine 1/4 cup milk, cocoa and sugar and allow to boil for 1 minute; remove from heat and add butter and vanilla. Mix well and cool.
  5. Pour sauce over graham cracker layer and refrigerate until set; serve.

Very good, easy. The only change I made was to use confectioners sugar instead of regular white sugar in the chocolate topping. The graham crackers absorb the pudding moisture, so it’s easy to serve.

We just made this last night for the Super Bowl. It was a recipe we already had. It is very good. I noticed in the photo the graham crackers seemed regular not chocolate. Actually I’ve never seen chocolate ones. Either will be delicious. I already cut them up so as not to have to do it in front of company. The chocolate ganache gets a little stiff and cutting neatly is hard but taste great just the same.

Love it! Used it for years! But I made some changes. I use French Vanilla pudding and I make my pudding layers thicker, less graham crackers. I also use regular crackers! It is much better this way! Everyone loves it!!

Delicious and easy! This is a great crowd-pleaser. I made only a few minor changes to this delightful recipe. I doubled the sauce because the first time I did this recipe I felt it needed more chocolate glaze. I bought regular graham crackers, and I used French Vanilla pudding. Use a whisk to mix the pudding, a spoon does not mix the milk and powder very well. Then fold in the cool whip. I did not have to butter the pan. Also, the chocolate topping was a bit grainy the first time I made it because of the granulated sugar. So, the next time I used a chocolate glaze recipe from another reviewer. I used 12 tb of butter, 12 tb of cocoa powder, 2.5 c. of powdered sugar, 4 tb of hot water and 2 tsp of vanilla. Much better!! Waiting over night makes all the difference. We ate it for Easter the following day and was well received by all! Thank you!

I halved the recipe and made in an 8×8 pan. My suggestion is to not half the chocolate topping and use the full amount on the 8×8. I also used special infused butter in the chocolate topping for that little extra something. This was easy to make and tasty. I’d make this again!! Picture is what was left because we couldn’t wait to dig in!

I have celiac and HAVE to eaten gluten free. It is so very hard to find good desserts. I adapted this by substituting gluten free graham crackers, and it was actually good! Thank you for the recipe, but I beg you to please put more gluten free recipes in these emails you send. There are a lot of us celiacs out here. This gluten free diet is NOT a life style choice for us. We have to stay on it or get sick. Thanks again. Diane
