Wedge Salad with Blue Cheese Dressing

Ingredients

  1. 1 pound crumbled blue cheese, divided
  2. ½ cup mayonnaise
  3. ⅓ cup buttermilk
  4. ¼ cup red wine vinegar
  5. ¼ cup sour cream
  6. 1 ½ tablespoons white sugar
  7. 1 tablespoon extra-virgin olive oil
  8. 1 clove garlic, minced
  9. ground black pepper to taste
  10. 1 head iceberg lettuce, cut into 8 wedges
  11. 2 roma tomatoes, diced
  12. 1 small red onion, thinly sliced

Instructions

  1. Gather all ingredients.

  3. Combine 1/2 of the blue cheese, mayonnaise, buttermilk, vinegar, sour cream, sugar, olive oil, garlic, and pepper in a bowl; blend with an electric hand mixer until well combined. Cover and chill in the refrigerator until serving.

  5. Place each lettuce wedge on a salad plate. Drizzle dressing over each wedge. Scatter tomatoes, onion, and remaining blue cheese over each salad.

I notice that everyone who gave this 4 or 5 stars, and as shown in most of the photos, added bacon. There is no bacon in the recipe. I have never tasted vinegar in store bought or restaurant blue cheese but you sure can taste it in this recipe. Will stick with Litehouse brand.

If you leave out the sugar, vinegar, and oil and use only enough milk to thin it out to desired consistency. You’ll have a good dressing. Add the blue cheese at the end for a nice chunky dressing.

Really liked it! Surprisingly easy and very refreshing. I didn’t have any buttermilk, but I added vinegar and milk…it did the trick. I didn’t chill overnight, but my cold ingredients did more than fine!

This is a great recipe. I cut both sugar and blue cheese by about a third. Will cut sugar more and probably try to use the same amount of better quality blue cheese next time. This is a real keeper and would be great as a creamy garlic without the blue cheese.

I used 5 oz. of blue cheese which was perfect. Next time I make the dressing I’ll leave out the sugar. It was a little too sweet for me. Added crumbled bacon on top to make this salad fabulous.

Excellent recipe! I’ve been making it for years!. 1/2 cup of blue cheese is plenty or I usually do half of a 4 0z. container. Always adjust for personal taste. You Must let the flavors marry for at least a few hours. I use this as a salad dressing as well as a chicken wing dip.

My son-in-law’s favorite salad, and I didn’t even know it! He even topped my overdone ribeye with some of the dressing and said it was fine, too. I did add freshly fried bacon bits and my daughter used the drippings to cook delicious Brussels sprouts! A fabulous dinner!

Excellent and simple yet a very eye catching and retro dish. The fresh made Blue Cheese dressing sets it over the edge. I added only a hint of Worcestershire Sauce similar to a 1925 salad.
