With some warmed maple syrup on top and some breakfast sausages, apple fritter pancakes make a fantastic breakfast. For this recipe, any apple will work; I used Honeycrisp, though Fuji also works well. The sweeter the apple, the better. Add an additional tablespoon of sugar if you’re using a tart apple.

Ingredients
- 1 loaf unsliced French bread
- 2 tablespoons mayonnaise, or as needed
- 2 tablespoons mustard, or as needed
- 16 ounces surimi (imitation crabmeat)
- 4 slices Muenster cheese
- 4 slices olby-Jack cheese
- 1 large tomato, sliced
- 1 avocado, pitted, peeled and sliced
- 2 cups alfalfa sprouts
- salt and ground black pepper to taste
Instructions
- Slice loaf in half lengthwise. Scoop out and discard the center portion of each half to make a hollow. Spread mayonnaise over bottom piece; spread mustard over top piece.
- Fill bottom hollow with surimi. Cover with Muenster and Colby-Jack cheese, then layer with tomato, avocado, and sprouts. Season with salt and pepper. Cover with top piece and slice across loaf to make 6 sandwiches.

I made as written for the first sandwich and I too thought it was a little on the bland side. For the 2nd sandwich I tossed the crab in some zesty Italian salad dressing prior to putting it on the sandwich and this bumped up the flavor quite a bit. I loved all of the different textures and colors going on and this is one I would make again. Next time I will add some red onion slices and maybe even some bacon.
This sandwich was sensational a new twist on an old favorite! My whole family loved it, even my 4 & 1 year olds. The sprout gave it great texture, these cheeses are a delicous mixture. This is definately a new family favorite! * I must say this sandwich is not bland in the least.
