Cowboy Casserole with Biscuits

Anyone’s inner cowboy will come out when they eat this dish of hamburger, beans, and bacon over biscuits. The whole family now enjoys it. We enjoy making it when we are camping because it is so simple to make.

Ingredients

  1. ½ pound bacon
  2. 1 pound ground beef
  3. 1 small onion, chopped
  4. 2 (15 ounce) cans baked beans with pork
  5. ⅓ cup barbeque sauce
  6. 1 (7.5 ounce) package refrigerated biscuit dough

Instructions

  1. Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite size pieces. Set aside. Add hamburger and onion to the skillet, and cook until no longer pink, and the onion is tender. Drain.
  2. Stir bacon, baked beans and barbeque sauce into the ground beef, and bring to a boil. Reduce heat to medium low, and place biscuits in a single layer over the top of the mixture. Cover, and simmer for about 10 minutes, or until the biscuits are done. Place two biscuits on each plate, and spoon beans over.

My family loved this dish. I added paprika and cayenne pepper to give it a little kick. I also used my cast iron skillet. After I got the bean mixture to a boil, I added the biscuits on top and put it in the oven to bake. Everyone went back for seconds.

I really liked this! Next time, I’ll serve it with a tossed salad or coleslaw. I cut the recipe in half but did keep the amount of beans—only, 1 can of baked beans and 1 can of kidney beans. I added a little cayenne, chili powder and some broth. I’ll try it with oven fried potatoes on the side opposed to tater tots. Made this again with beans I “baked” in the instant pot. Awesome!

Very good! But, I made an error. I thought it looked too “wet” before adding the biscuits and allowed the liquid to cook off. BIG MISTAKE, turned out too dry. Don’t let the liquid fool you. Biscuits will not be brown, but at 9 minutes they were done. Hubby ate 2/3 of it so it must have been good.

Biscuits too gummy on bottom. Had to remove them & flip over to bake a little longer. But still very yummy! Will try cornbread next time.

I made this in a Crock pot! (took four hours.) Only cooked the bacon till crispy then added to pot. Also, made this without the rolls and only added a couple tablespoons of BBQ sauce. (cutting down on bread/sugar) and it was wonderful! EASY!!!! Tasted better than I thought it would! I made the menfolk rice and they went crazy for it.

It turned out great, except the biscuits were not fully cooked after 15 minutes. Next time I will bake the biscuits in the oven.

When I made this, In a cast iron skillet, I added 1T mustard and sautéed (with the bacon) unions. Then topped the mixture with cornbread and baked it in the oven.

To cut down on fat and calories, I omitted the bacon, used beans w/out pork and drained the bean sauce in the can. I also used ground turkey and cooked and drained the meat before adding the onion. Served over cornbread. Even with these changes, still had a ton of flavor.

Made this for supper tonight for the hubbs and myself. Wow! Lots of food and very tasty! Made the Beef and Beans portion pretty much as per directions. The only difference was that I used the precooked bacon because it was all that I had on hand. I also made homemade biscuits because I didn’t have the tube variety and cooked them in the oven while preparing the Beef and Bean portion. I split the biscuits and spooned the Beef and Beans over the top. YUM!! We’ll be having leftovers for a day, maybe two!!

I followed the recipe and everything stuck to the pan and burned, and the biscuits never really turned brown. We threw most of it away.
