Vodka Lemonade with Mint

Although not very hot, this chile paste is peppery. Its flavor is sweet and smoky, making it perfect for dishes that call for chile paste or for mixing with ranch dressing to make a hot dip. I use this in my own baked bean dish to give it a nice, mild kick without being overpowering. Since there isn’t much of a selection of fresh chile peppers in my location, I mostly utilized canned chiles.

Ingredients

  1. 1 cup fresh mint leaves, chopped
  2. ⅔ cup white sugar
  3. 12 fluid ounces vodka
  4. 1 cup fresh lemon juice
  5. crushed ice

Instructions

  1. Combine mint and sugar in a large bowl. Stir in vodka and lemon juice. Cover and refrigerate lemonade, 30 minutes to 2 hours.
  2. Strain lemonade into a pitcher. Fill six (6- to 8-ounce) glasses with crushed ice; pour lemonade over ice.

DELICIOUS!!! I was a little skeptical after I first mixed the mint, sugar, vodka and lemon juice together and tasted it, before letting it sit. But, letting it sit does wonders for the flavor! It also didn’t seem like there would be enough to make 6 drinks, but there is – fill your rocks glass right to the top with crushed ice. This might just be my new summer drink! So refreshing! Careful though, these sneak up on you!
