Spinach, Sausage, and Egg Casserole

This casserole of sausage and eggs without bread is popular every time. After my boyfriend described an egg dish that I couldn’t find a recipe for, I made it myself. Everyone enjoyed the food he brought on a hunting expedition.

Ingredients

  1. 1 pound breakfast sausage
  2. 11 large eggs
  3. ¾ cup milk
  4. 2 cups shredded sharp Cheddar cheese
  5. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  6. 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
  2. Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  3. Beat together eggs and milk in a large bowl. Stir in cooked sausage, Cheddar cheese, spinach, and oregano until well combined; pour into the prepared baking dish.
  4. Bake in the preheated oven until a knife inserted into the center of casserole comes out clean, 30 to 40 minutes.

Easy but not outstanding. Cooked 45 min. in cast-iron pan, slightly too long. Recommend using sharp cheddar or Swiss cheese. I used Andouille sausage diced which added heat and tasted good.

All three of my children(all under the age of 5) gobbled down and requested more. One was even trying to climb onto the counter to get more . Made the recipe AS IS. This is a great simple and quick recipe. Could you add sautéed this and that? well of course. If you like add more salt and pepper too. But with all the salt from cheese and meat it really is salty enough for our family. I had seconds myself and thought the flavor was good.

My son and I both loved it. I used turkey sausage instead of regular breakfast pork sausage. It reduced the fat and calories only a little. I also sauteed onion and bell pepper while browning the turkey sausage. I used 6oz of fresh baby spinach leaves instead of frozen. I think it would do well with mushrooms, too. I love that it can be kept and reheated as leftovers, too. I can make a few days worth of breakfast all at once.

Used Italian Sausage and added the torn spinach. I used half egg beaters and also added an Italian blend cheese. It was awesome!

I added some feta and tomato to part of the casserole. But I also made it in my cast iron skillet. One and done less clean up! And I did add pepper and Italian seasoning (since I was out of oregano). I think adding onions would be very tasty as well but bc of family food sensitivities I left them out. Yummy!

This is my go-to hearty, easy recipe! I use 1 tsp of oregano and the Kroger brand of hot sausage. (The Kroger brand doesn’t contain MSG.) I also use 8 oz of fresh spinach per recipe cut up small. We have 8 kids still in the house ages 17-2. I double the recipe, so we use two 13×9 pans. If there are leftovers, they microwave beautifully!

Made this for my family and they said it was the best thing I had made in a long time! I used 12 eggs and chopped up fresh spinach that I had in the fridge. I added about 2.5 cloves of garlic to the pan while browning the meat and scraped out all the goodness on the bottom of the pan to add to the bowl. I changed the amount of oregano to 1 tsp. and added salt and pepper. Also sprinkled a little more cheese on the top. It was so good! Heated leftovers in the cast iron the next day and it was still just as good!! Thanks for the inspiration. Will definitely be making again.

I made this with a few variations…I used only 10 eggs, added chopped onions, sliced crimini mushrooms and added Italian seasoning, which includes thyme, oregano, garlic powder, basil and parsley. I cooked the sausage, spinach, onions and mushrooms in advance. I rolled out a packaged refrigerated crescent roll dough and layered the bottom of the pan and baked at 350 degrees for 7 minutes. Then I spread the mixture above over the crescent dough and then poured the egg and milk mixture to evenly coat everything. It took approximately 50 minutes to cook throughly. It was delicious and hearty!

Everyone loved it! Will definitely make anytime I need a breakfast casserole! I used turkey breakfast sausage, cheddar/jack cheese, for spices I used 1tsp. Italian, 1 tsp. minced onion, some garlic powder and some pepper. I used fresh spinach which I wilted in the pan after the sausage cooked.

My family absolutely loved this. I changed it up some. I used 14 large eggs instead of 11 eggs as others suggested, I used 1/2 tea of oregano, 1/2 teas of basil, 3/4 teas of garlic, instead of 1 teas of oregano. I used 1 cup mild cheddar and 1 cup of sharp cheddar, instead of 2 cups sharp cheddar. I also added 1/2 cup of sautéed onions and sautéed mushrooms. After mixing it all together I topped it off with a little bit of mozzarella cheese and cheddar cheese. You do not need to add salt or pepper, the Jimmy Deans mild sausage has lots of flavor. One thing I did do is, the night before I combined the eggs, cooked sausage, spices, and the completely drained frozen spinach (I squeezed excess moisture from spinach) and refrigerated in a covered 9×13 dish overnight. Next day I added the sautéed onions, mushrooms and the cheese. Easy!!!

I will be adding this to the rotation. I took some suggestions added green onions & mushrooms garlic powder & diced up Roma tomatoes and garnished with them. Really just add what you like . I made sure to sauté the veggies first so it does not get watery & squeeze the heck out of the spinach

Made this breakfast casserole for New Years Day brunch. I used brown and serve breakfast turkey sausage links. Thawed them and then chopped up and browned. Used regular cheddar cheese but will try next time with sharp cheddar cheese. Everyone loved it!

I used fresh spinach and threw a can of diced tomatoes just for color. And I had a left over chopped onion. The only sausage I had was maple flavored but in it went. This was really really good. Helped inch our way closer to pay day for sure. Thank you for such an easy recipe. I will be making this again

I’ll make this casserole on Sunday and breakfast is covered for the rest of the week. This is a fairly easy recipe to customize for your specific taste – there’s a few things I differently: (1) chop up 1/2 onion and sautee in the sausage drippings with a tsp of minced garlic; (2) add some rosemary to the sausage while it browns. You can also play with the ratios to make it more spinach-y, meaty, or egg-y.
