These tiny lamb cupcakes that I baked for Easter made the ideal placemat decorations for my family. They were well-liked by everyone and took little time to adorn.

Ingredients

  1. 1 (8 ounce) package cream cheese
  2. 1 (7 ounce) jar marshmallow creme
  3. ¾ cup confectioners’ sugar
  4. ⅛ teaspoon lemon juice

Instructions

  1. Blend cream cheese, marshmallow creme, sugar, and lemon juice in a large bowl with an electric mixer until smooth.

Such a simple, easy recipe, but sooooo good. My only complaint would be mixing marshmellow fluff, not that easy, so sticky. I used 1/2 strawberry and 1/2 pineapple cream cheese. This makes a very large portion so save room for the fruit.
