Cinnamon Swirl French Toast Casserole

This comforting, sweet cinnamon bread dish is a wonderful alternative to custard-topped French toast. Every Christmas morning, we have it. Serve with strawberry or blackberry preserves and whipped cream.

Ingredients

  1. 1 stick butter, softened, or as needed
  2. 1 (16 ounce) loaf cinnamon swirl bread (such as Pepperidge Farm®)
  3. 1 ½ cups milk
  4. 4 large eggs
  5. ¼ cup white sugar
  6. 1 teaspoon vanilla extract
  7. ¼ teaspoon salt

Instructions

  1. Butter 6 slices cinnamon swirl bread, then place them butter-side down into a casserole dish. Butter 6 more bread slices and place them butter-side down on the other slices.
  2. Mix together milk, eggs, sugar, vanilla, and salt in a bowl until smooth and pour over bread in the casserole dish. Cover and place in the refrigerator for 8 hours to overnight.
  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Place the casserole dish inside a larger pan; pour water into the outer pan, making sure not to get water in casserole.
  5. Bake in the preheated oven until a knife inserted into the center comes out mostly clean, about 50 minutes.
  6. You can use margarine instead of butter if you prefer.

I made 2 batches of this exactly as written, one cinnamon and the other pumpkin spice swirl bread. 3 out of 4 people likes it and all had complaints of it being a bit soggy. If I make this again, I will experiment with the cooking method.
