Lime Cilantro Cauliflower “Rice”

In this tasty, grain-free side dish, grated cauliflower replaces the rice.

Ingredients

  1. 1 head cauliflower, cut into florets
  2. 1 tablespoon water
  3. 1 lime, juiced and zested
  4. ½ cup chopped cilantro
  5. 2 tablespoons butter (Optional)

Instructions

  1. Grate cauliflower florets or pulse in a food processor until it resembles rice.
  2. Place grated cauliflower and water in a microwave-safe covered dish.
  3. Cook cauliflower in microwave on high until tender, about 7 minutes.
  4. Stir lime zest, lime juice, cilantro, and butter into cooked cauliflower until well blended.

This is very good on its own. But I also used it as a base for other dishes instead of rice. It’s very bright and tasty and since my husband has diabetes and needs to watch his carb intake it’s a great substitute.

This was delicious! In the past I had always used the frozen cauliflower rice but it makes such a difference when you use fresh cauliflower that you rice yourself. This recipe was so simple to make and made plenty of rice which I used for several meals. I love cilantro and lime flavors so this recipe was right up my alley. As someone who is a notoriously picky eater, I highly suggest this!

I made this using the processor to “rice” the cauliiflower and that was easy peasy. This was pretty good when it was hot. Out of the fridge the next day, and it definitely had to be heated up. I did not care for it cold.
