Ingredients
- 2 teaspoons unsalted butter
- 2 teaspoons minced fresh ginger
- 1 clove garlic, minced
- 1 (3 inch) cinnamon stick
- 1 cup uncooked jasmine rice
- ¾ cup water
- ¾ cup light coconut milk
- 1 teaspoon white sugar
- ½ teaspoon kosher salt
- ¼ teaspoon grated lime zest
- ⅛ teaspoon ground white pepper
- ¼ cup shredded unsweetened coconut, toasted
Instructions
- Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick, and sauté until fragrant, about 1 minute. Stir in rice, and sauté until rice grains are opaque, about 2 minutes. Add water, coconut milk, sugar, salt, lime zest, and white pepper and bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes.
- Fluff rice with a fork, cover, and let rest for 5 minutes. Garnish with toasted coconut, if using.

I made this rice to go with Caribbean chicken and served it at a gathering. Everyone loved the rice. It was the first thing to go!
We thought the flavor was a bit on the weak side considering all of the ideally spiced seasonings. It did cook up nicely at 15 minutes, and since I had a lime left from the zesting, I just squeezed the juice from it and added to the rice. That really brightened the flavor, and I will incorporate that into the recipe for the next time I make it (could just be personal taste kicking in). Thanks for sharing.
Made as instructed. Next time I will definitely double all spices except the sugar as flavor was lacking. Texture was great. Be sure to wash the rice first!
