Simple Garbanzos

These meringue mushrooms need some effort and patience, but they are magnificent. They are incredibly sought-after for Christmas gift-giving! The pastry bag must have a simple tip. These mushrooms look incredibly lifelike when planted inside of green plastic fruit baskets that you saved from the summer.

Ingredients

  1. 1 (15.5 ounce) can garbanzo beans, drained and rinsed
  2. ¼ onion, grated
  3. ½ lemon, juiced
  4. 1 clove garlic, crushed
  5. 1 teaspoon dried oregano
  6. ½ teaspoon salt
  7. ¼ teaspoon ground black pepper
  8. ¼ teaspoon ground cayenne pepper
  9. 5 tablespoons olive oil
  10. ¼ cup frozen green peas, thawed

Instructions

  1. In a bowl, mix the garbanzo beans, onion, lemon juice, garlic, oregano, salt, black pepper, and cayenne pepper. Stir in the olive oil, and adjust seasonings to taste. Mix in the peas. Cover, and marinate in the refrigerator at least 1 hour.

Family really liked this. I used edamame instead of peas and I had to increase everything because in Canada our tins of chickpeas are 19 fl. oz. So once I had it all together and tasted it, it needed more of the spices.

I will definitely make this over and over again! I didn’t have lemon and substituted lime juice and it was amazing! My brother loved it and suggested that I add bowtie pasta and maybe some peppers. I’ll do that next time. I think this recipe is beautiful as is and there are also unlimited ways to “tweak” it depending on what I have on hand. Thanks for sharing!

I doubled the peas and reduced the oil to 2 tbsp, 5 just seemed excessive. I thought it was too oregano-y but my family loved it so… four stars.

this was very easy and tasty. I doubled the peas and reduced olive oil to 3 TBS. I didn’t grate the onions, just chopped them very finely. Yummy

HAVE DONE THIS DISH MANY TIMES SINCE 2007,SO TODAY AFTER HAVING SOME GARBANZO BEANS LEFT OVER THAT I DID FROM SCRATCH FOR HUMMUS I MADE ANOTHER BATCH THAT I LOVE, AND REALIZED THAT I NEVER THANKED SHELAGH AND POSTED A REVIEW. IT CAN BE TWEAKED IF YOU WISH. THIS IS A KEEPER.

Simple Garbanzos=Great! Upgraded simple garbanzos=awesome! added: 1/8 cup chopped sundried tomatoes 4 TBSP Olive oil 1/2 TSP red pepper flakes 1/4 Large yellow bell Pepper 1/2 Cup Edamame (instead of peas) 1/4 Large Red onion chopped finely 1 medium yellow carrot julienned and chopped 1 medium regular carrot julienned and chopped Even better the next day!

Loved this! I added diced orange bell pepper for a little extra texture and flavor. I increased the cayenne pepper a tad and as other reviews did, I also increased the peas to 1/2 cup and decreased the olive oil to 3 Tbsp. Ate as a side dish, but could definitely eat as a snack as well. Yum!

Was looking for some healthy snack/side recipes using garbanzos and came across this. It is delicious! I didn’t have lemon so I subbed lime juice, ommitted the peas (don’t like frozen peas) and added a little less olive oil and a little more salt. Made them last nigth and marinated overnight to bring to work with my lunch and they are absolutely wonderful!

I thought this was a good basic recipe, but it lacked a little luster as it was, so I rated it a 3. We added Feta and added sea salt. With these adjustments it made it a 4 star. I will definitely make it again since I almost always have it’s ingredients on hand.
