Beer, lime juice, and seasonings marinated on the grill for the chicken. It truly is fantastic!

Ingredients

  1. 1 lime, juiced
  2. 1 (12 fluid ounce) can light colored beer
  3. 1 teaspoon honey
  4. 2 cloves garlic, minced
  5. 2 tablespoons chopped fresh cilantro
  6. Salt and pepper
  7. 4 skinless, boneless chicken breast halves

Instructions

  1. In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes.
  2. Preheat an outdoor grill for medium heat and lightly oil grate.
  3. Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.

This was very good and super easy. I used 2 large chicken breasts cut in half to make 4 decent size servings. Added those to the same amounts of “marinade mix” that the recipe called for. I let them marinade for several hours up to over night when possible before grilling. Great flavor and the beer kept the meat tender and moist.

Let it marinate for more than the 30 minutes called for, used twice the lime and garlic called for. We tasted…nothing. I’m glad I didn’t waste a beer that I actually like.

This one just didn’t do it for me. I used fresh ingredients, followed the recipe exactly, and it came out looking just like the picture. But it was bland—other than a hint of cilantro, the flavors didn’t come through.

This recipe definitely needs more than just ‘a pinch’ of salt and pepper, otherwise the rest of the ingredients are lost. Please salt and pepper your chicken as you regularly do! You should taste the salt in the marinade. I also added a tbsp of fresh coriander in addition to the cilantro.

I usually slice up the chicken into 1-2 cm strips before marinating for a couple of hours, otherwise the inside of the chicken doesn’t see the light of day or marinade. It then BBQ’s faster, so you need higher heat (flash fry) if you want grill marks. And as others say, it is a very mild marinade. Adding lime zest would help (as someone mentioned).

I followed the recipe, plus added in a little chili powder, cumin, and chipotle pepper powder for extra flavor. Chicken was moist and flavorful. I can see how not adding a bit more spices could have made it a bit on the bland side or just taste like beer.

Chicken was moist, but very bland. Tasted like we just plopped the chicken on the grill with no seasoning. Maybe a longer marinade time would help. Rating as 2 stars because it wasn’t inedible.

We LOVE this. Made as described with one major change – we used dark meat (leg/thigh quarters). I think the dark meat takes on flavors better than white and isn’tdry when grilled.

This dish was ok, rather bland but simplistic. My family ate it but it was not one of the best recipes I’ve made. If I make this again I would increase the flavor by adding the zest of the lime along with the juices and increase the garlic & cilantro. To finish the chicken I would cut a lime in half and grill it to release the juice and increase its flavor & sweetness, then squeeze it onto the chicken before serving with some fresh cilantro.
