Vegan Open-Faced ALT (Avocado, Lettuce, Tomato)

In this sweet beer bread, strawberries and fresh basil go together beautifully. It tastes great toasted for morning or eaten with a pig or chicken supper. You can use any preferred beer, but I believe a fruity beer, such one with citrus or apple notes, is preferable. Beer can be replaced with lemon-lime soda.

Ingredients

  1. 2 tablespoons vegan mayonnaise (such as Fabanaise™)
  2. 1 whole-grain English muffin, toasted
  3. 1 avocado, sliced
  4. 1 small tomato, sliced
  5. ½ leaf lettuce, halved lengthwise

Instructions

  1. Spread 1 tablespoon mayonnaise over each half of the English muffin. Add avocado and tomato slices. Top with lettuce.

I make this a lot but not with mayo. I mash the avocado and spread it on toast and then add tomato and lettuce. It’s delicious.
