Mom’s Dill Potato Salad

This is a wonderful substitute for the traditional yellow potato salad. Dried dill is much more strong than fresh, and it helps to offset some of the blandness of dishes with a similar flavor.

Ingredients

  1. 3 pounds new red potatoes
  2. 1 cup mayonnaise
  3. ¾ cup sour cream
  4. 2 tablespoons dried dill weed
  5. 4 green onions, chopped
  6. 1 pinch salt and ground black pepper to taste

Instructions

  1. Place potatoes in a large pot and cover with water. Bring to a boil over high heat, then turn heat to medium-low, cover, and cook until tender but still firm, about 15 minutes. Drain, cool in an ice water bath until cold, about 5 minutes. Leaving skins on, cut into bite-size pieces, and place in a large mixing bowl.
  2. Combine mayonnaise, sour cream, dill weed, and green onions in a bowl and stir until blended. Season with salt and pepper to taste. Pour mayo mixture over potatoes and toss to coat evenly. Adjust seasoning if necessary. Cover and refrigerate at least 2 hours, or overnight.

Increased the dill to 3 tablespoons and added 1 and 1/2 tablespoons of Dijon mustard, 1 tablespoon cider vinegar and 2 tablespoons of celery flakes. The mustard and vinegar was to add an acid note, suggested by my son who is a trained chef. I said “Okay Chef-Boy” and reminded him that he ate well for decades on my cooking. But I’ll confess it did add some needed zing to the dish. It will become a summer staple.

Good basic recipe! Simple and the potatoes are nice and creamy in the mayo and sour cream. Will make again. I added more dill than called for because we like it!

I love dill potato salad so was excited to try this. I used two tablespoons fresh dill from the garden in place of the dried. It gave it such a fresh flavor. I also used onion powder in place of green onions due to an onion hater in the house. We love boiled eggs in our potato salad so I added those as well as some dill pickle for crunch. Hubby and I enjoyed this. The grandkids, not so much.

I loved this. I am not a fan of potato salad that contains white/yellow onions or relish but this one was delicious. Simple, easy to make. I followed everything except the green onions (all our local stores were out of stock.) Even without them, it was good. My son also loved it. I know some reviews say it’s too simple but I personally like a simple potato salad. Will make this again soon! (Edited to say 6 days later, I made this again. 5lb of potatoes, with the recipe altered to reflect it. I did bigger chunks and it was just as good as the first time!)

Great basic potato salad! I used dill from the tube, added a celery stalk and hard boiled eggs. It definitely needs the salt and pepper, so don’t forget to season it. I also used low-fat sour cream and mayo to lighten it up a bit. It’ll go great with my beer can chicken later!

This was a pretty good basic recipe. I left the skins on, as it’s my preference. I think maybe a second variety of onions or pickles would really kick this up – or maybe some paprika?

6.8.20 I’m used to having bacon and hard boiled egg in my potato salad, but I must admit that I liked this potato salad even without them. Just a tad weak in flavor, so I probably will tweak the next time to suit our taste, but it’s a good base for a new type of potato salad. (loved the lack of mustard!).

This is probably the best dill potato recipe I have ever made. My mother who barely eats aked me to make extra just for her. I was floored! It’s so easy and great when ledt to marinate over night.

I used both fresh and dried dill. More green onions (8), lots of salt and pepper and a tiny bit of mustard powder. It was good but was missing a little something. There’s just two of us so we have a lot left. I’ll probably tweak my individual servings to see what might add a little something

Added some creme friache, fresh celery and sliced red onion instead of the green onions.. Add some salt to the potatoes while boiling them for some additional flavor. Yum!!!!!

I’ve never seemed to make a good potato salad until this recipe. I used a handful of fresh dill from our garden, white onion and white pepper. It was amazing!! I might add hard boiled eggs and celery salt next time. PRO TIP: Make sure the potatoes are a’dente.

This is AMAZING potato salad! As many others suggested, I increased the sour cream to 1 cup and reduced the dried dill weed to 1 ½ TBSP. I cut the potatoes up into about 3/4″ dice before cooking, and cooled them in the ice water bath. Oh, I also sprinkled some pickle juice over the potatoes before adding the dressing, as others suggested. This is so good I could eat it every day!! This is my new carry in (pot luck) recipe. Thank you!
