Ingredients
- ½ cup reduced-fat sour cream (such as Daisy®)
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill
- 3 cucumbers, halved lengthwise and thinly sliced crosswise
- ½ cup thinly sliced red onion
- coarse salt and ground black pepper to taste

- Mix sour cream, lemon juice, and dill together in a bowl. Add cucumbers and onion; stir to combine. Season with salt and black pepper.

Absolutely loved it!! I only had one English cucumber and no fresh dill or any fresh herbs. I sub’d the dill with dried herbs: oregano, parsley & basil. Super easy & quick. Plus great low calorie side or snack. Definitely saving this recipe. Easy way to jazz up a cucumber.
I made this several times to serve with fish. Followed the recipe, turned out delicious each time. I love the hint of red onion, too.
This is similar to my Polish mother’s recipe. I peel the cukes and cut them in half and cut each half again. I then slice away the seeds [they are what repeats on you} and cut the remains into somewhat half-moon slices. Everyone loves the sour cream dressing instead of the mayo vinegar one.
I made it with Tofutti non-dairy sour cream. Yummy!

i added a bit more sour cream and instead of using fresh dill i used dried dill to give it more flavor

My family and I love this recipe, it was fun any easy to make we used the veg’s from our garden and added some tomatoes ( they need to be used ) . We also loved that it was made with sour cream and not mayo .

Delish! Used lemon cucumbers, dried dill (1/2) and lemon juice (1/2). Really good and easy to modify.
