This graham crusted butter tart recipe is something I invented. I sincerely hope that everyone enjoys it as much as my family does.

Ingredients

  1. 4 tomatoes, sliced
  2. 1 onion, sliced and halved
  3. ¼ cup fresh basil leaves, or to taste
  4. ½ cup shredded mozzarella cheese
  5. 2 tablespoons olive oil
  6. 1 tablespoon lemon juice
  7. ¼ teaspoon oregano
  8. salt and ground black pepper to taste

Instructions

  1. Place tomato slices around the edge of a plate overlapping slightly, tucking in halved onion slices and basil leaves between tomato slices. Put shredded mozzarella cheese in center of plate.
  2. Whisk olive oil, lemon juice, oregano, salt, and black pepper together in a bowl; drizzle over tomatoes.
  3. Mozzarella cheese may be substituted with another cheese of your preference.

Great Caprese salad. I did leave off the onion. Just a personal preference. A lot of flexibility w presentation.

The dressing is excellent! I am a big fan of balsamic vinegar so I was surprised to like this so much but it was such a light, flavorful dressing that it allows the Veggies flavors to pop. Note: You can adjust the tomatoes, cheese, and onion to your liking (mozz balls or cubed and cherry or grape tomatoes, etc)

I liked this a lot more than I thought I would. The light dressing and onion didn’t hijack the delicate flavor of the mozzarella. I used fresh mozzarella balls. It certainly makes a beautiful presentation. Thank you, Pat, for another great recipe.

I have made this several times now and I always get great compliments on this recipe. The first few times I did not have fresh basil so I mixed ground basil up with the olive oil and poured it over everything. It’s works great both ways.

I marinated the tomato slices in a small bit of balsamic vinegar for an hour or so refrigerated. then topped them with feta all served coldly crisp.

I made this following the recipe except that I did it on individual tomato slices. It had an amazing burst of flavor with tomatoes, basil and green onions straight from the garden. Although it was simple it looked very fancy and we loved it!

Delicious salad, i used mozzarella goat cheese(lactose)and forgot the oregano but it was still very good.A very refreshing salad for lunch or dinner any time of the year. Thank you lutzflcat for the delightful recipe. Will be making it again..
