Ingredients

  1. 12 ounces sage-flavored bulk pork sausage
  2. 2 tablespoons butter
  3. 1 medium onion, chopped
  4. 2 ribs celery, sliced
  5. 6 button mushrooms, sliced
  6. ¼ cup chopped carrots
  7. 1 (2 pound) head cauliflower, cut into small florets
  8. ½ cup chicken broth
  9. ¼ cup freshly chopped parsley
  10. ½ teaspoon dried thyme leaves
  11. 1 pinch salt and ground black pepper to taste

Instructions

  1. Place sausage into a large skillet and cook over medium-high heat until browned and crumbly, about 5 minutes. Add butter, then stir in onion, celery, mushrooms, and carrots; cook for 5 more minutes.
  2. Mix in cauliflower, broth, parsley, thyme, salt, and pepper. Cover and cook 10 minutes. Uncover and cook until liquid is absorbed, about 5 more minutes.

This was so yummy and a nice change from a usual vegetable. It could actually be a “meal” but I used it as a side dish for my family. My husband said that he could eat it every night and my oldest two boys loved it. My younger two children actually didn’t “complain” so I know we’re on to something. I actually may start taking this to group dinners/Christmas etc as a wonderful alternative to heavy vegetable casseroles.
