Bacon-Cheddar Cauliflower Chowder

Campbell’s mushroom soup helps this creamy, cheesy broccoli casserole come together quickly. It can be a vegetarian side dish or a major entrée.

Ingredients

  1. 8 strips bacon
  2. 1 stalk celery, finely chopped
  3. 2 tablespoons minced fresh garlic
  4. 5 cups finely chopped cauliflower
  5. 2 tablespoons water
  6. 1 teaspoon onion powder
  7. 2 cups milk
  8. 2 cups chicken broth, divided
  9. 3 dashes hot sauce, or to taste (Optional)
  10. 2 tablespoons flour
  11. 2 cups shredded sharp Cheddar cheese
  12. salt and ground black pepper to taste

Instructions

  1. Cook bacon in a large skillet and over medium heat, turning occasionally, until crispy, 10 to 12 minutes. Transfer to a paper towel-lined plate with a slotted spoon, leaving bacon grease in the skillet. Crumble bacon when cool to the touch.
  2. Add celery and garlic to the skillet and cook in the bacon grease until celery is tender, 3 to 4 minutes. Add cauliflower, water, and onion powder; cover skillet to steam cauliflower. Cook, stirring every so often, until cauliflower is tender, about 5 minutes.
  3. Add milk, 1 3/4 cups chicken broth, and hot sauce. Bring to a boil.
  4. Meanwhile, whisk flour into the remaining chicken broth in a small bowl and drizzle into the boiling chowder. Add Cheddar cheese and 1/2 of the crumbled bacon. Stir until smooth and cheese has melted.
  5. Season with salt, pepper, and hot sauce. Ladle into bowls and top with remaining bacon.
  6. Use any type of bacon you’d like, such as turkey, low-sodium, or precooked.
  7. You can use a food processor for the celery, garlic, and cauliflower if you prefer. I originally hand chopped all the ingredients, but the chowder was too chunky, so I started finishing it with my blender.
  8. If you’d like a smoother chowder, use a blender before adding the Cheddar cheese and bacon. Fill blender halfway with chowder. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend to desired consistency. Pour into a pot. Repeat with remaining chowder.

So delicious! So easy to make, it’s a go to recipe for me as a uni student, I make a full batch and heat up leftovers in the microwave (just as good reheated). Keeps for up to two weeks in the fridge. Can’t express how much I love this, such a good comfort food! : )

I recommend cooking the cauliflower until really soft consistency if you want a more creamy texture after putting in blender. It was more of rough texture for me. Color shown from photo did not turn out like that.

6 year old loved it. I did use real onions. I also used an immersion blender until I got my desired consistency. Simple recipe with simple ingredients = perfect!

Fantastic side dish. Flavors blend well together. Might want to beer to the recipe or to pair with. Cook the leftover bacon and make BLTs or Bacon Burgers to eat with the meal

My family are soup lovers. This one is very good. The only change I’ve made is the onion powder. Chemicals in it. I use real onion. If you have somebody that doesn’t like onion, just run them thru the blender. I’ve changed a lot of kids that didn’t like onions with this tactic. What they really don’t like is biting into the onion. They actually like the flavor. Besides, onions are good for you.
